Abstract

Salah satu jenis madu berdasarkan jenis nektar bunga yang diambil lebah adalah madu multiflora. Madu multiflora merupakan jenis madu yang berasal dari berbagai jenis nektar bunga. Rata-rata madu yang dihasilkan di Indonesia memiliki kadar air diatas 22%. Madu dengan kadar air diatas 22% terancam mengalami fermentasi yang akan mempengaruhi rasa dan aromanya. Fementasi yang terjadi pada madu akan menurunkan kadar gula total dalam madu. Salah satu penyebab kenaikan kadar air madu adalah kelembaban lingkungan ketika madu di panen maupun disimpan. Madu merupakan bahan pangan yang memiliki sifat higroskopis, sehingga mampu menyerap air dari lingkungannya. Semakin banyak air yang diserap maka kadar air didalamnya akan semakin naik. Salah satu cara untuk mengatasi masalah kadar air madu adalah dengan pengolahan menggunakan metode electroosmosis dewatering. Metode ini akan menurunkan kadar air dalam suatu bahan dengan mengalirkan listrik searah (DC). Listrik searah akan menarik air dalam madu menuju eletroda negatif, sehingga air dapat dikeluarkan dari dalam madu. Pada penelitian ini menggunakan tegangan 350 V dengan sampel madu multiflora sebanyak 100 gram serta lama waktu perlakuan 1,5 jam, 2 jam dan 2,5 jam. Metode penelitian yang digunakan yaitu Rancangan Acak Lengkap (RAL). Selanjutnya dilakukan analisis data menggunakan metode Analysis of Varian (ANOVA) dan dilanjutkan dengan Uji Duncan Multiple Range Test (DMRT). Berdasarkan Uji Analisis Sidik Ragam (ANOVA) dengan taraf kepercayaan (α) =5% didapatkan hasil bahwa lama perlakuan metode electroosmosis dewatering berpengaruh nyata terhadap kadar air, kadar abu dan total padatan terlarut. Pada Uji Lanjut Duncan dengan taraf kepercayaan (α) =5% perlakuan 2,5 jam berpengaruh nyata terhadap kadar air, kadar abu dan total padatan terlarut (TDS).

English Abstract

One type of honey based on the type of flower nectar taken by bees is multiflora honey. Multiflora honey is a type of honey derived from various types of flower nectar. The average honey produced in Indonesia has a moisture content above 22%. Honey with water content above 22% is threatened with fermentation which will affect the taste and aroma. Fermentation that occurs in honey will reduce the total sugar content in honey. One of the causes of the increase in the water content of honey is the humidity of the environment when honey is harvested or stored. Honey is a food ingredient that has hygroscopic properties, so it is able to absorb water from its environment. The more water that is absorbed, the water content in it will increase. One way to overcome the problem of water content of honey is by processing it using the electroosmosis dewatering method. This method will reduce the water content in a material by flowing direct electricity (DC). Direct electricity will pull the water in the honey towards the negative electrode, so that the water can be removed from the honey. In this study using a voltage of 350 V with a sample of 100 grams of multiflora honey and a treatment time of 1.5 hours, 2 hours and 2.5 hours. The research method used is Completely Randomized Design (CRD). Furthermore, data analysis was carried out using the Analysis of Variance (ANOVA) method and continued with the Duncan Multiple Range Test (DMRT). Based on the analysis of variance fingerprint analysis (ANOVA) with a confidence level (α) = 5%, it was found that the length of treatment with the electroosmosis dewatering method had a significant effect on water content, ash content and total dissolved solids. In Duncan's Advanced Test with a confidence level (α) = 5% 2.5 hours treatment had a significant effect on water content, ash content and total dissolved solids (TDS).
