Abstract
UKM Barin Food, Malang adalah perusahaan yang bergerak di bidang produksi makanan olahan oleh-oleh khas Malang. Salah satu produk unggulan UKM ini adalah produk eggroll. Pada triwulan I tahun 2022, data menunjukkan bahwa produk eggroll varian vanilla menghasilkan 6831 roll produk cacat. UKM Barin Food pun masih belum menerapkan instrumen apapun untuk mengendalikan mutu produk. Berdasarkan uraian di atas, maka tujuan yang ingin dicapai dalam penelitian ini adalah untuk menerapkan metode Statistical Quality Control (SQC) dengan histogram, teknik diagram kendali, diagram sebab akibat pada perusahaan dalam pengendalian kualitas untuk meminimalkan produk yang gagal. Hasil analisis menggunakan SQC menunjukkan bahwa UKM Barin Food perlu melakukan tindakan penekanan terhadap produk cacat yang dihasilkan. Faktor yang memepengaruhi terjadinya cacat produk dibagi menjadi empat variabel (manusia, mesin, material, dan lingkungan). Analisis SQC menghasilkan usulan perbaikan berupa pembaruan mesin produksi.
English Abstract
Barin Food is an SME in Malang producing processed food distinctive to Malang; eggroll is one of its featured products. In the first quarter of 2022, it is recorded that 6831 pieces of vanilla eggroll were broken. The company has not used any instrument to control product quality. The goal of this study is to apply Statistical Quality Control method to minimize broken product in the company using histogram, Control Chart, and Fishbone Chart. The results of the analyses show that the company needs to suppress the number of broken product. The cause of the flaws is divided into four: human, machine, material, and environment. The result of the SQC analysis suggest the renewal of production machines
