Abstract
Jamur tiram putih (Plaerotus ostreatus) merupakan jamur kayu yang cukup populer dan banyak diminati oleh masyarakat. Proses pengeringan jamur tiram dilakukan untuk memperpanjang umur simpan jamur tiram dan mempermudah penangolahannya. Salah satu contoh pengeringan yang dapat dilakukan adalah menggunakan alat pengering tungku tipe rak berbahan bakar biomassa. Pengeringan ini memanfaatkan energi biomassa dengan menyalurkan panas dari bawah rak pengering. Tetapi alat pengering ini memiliki kekurangan yaitu bila menggunakan biomassa, panas pada ruang pengering akan sangat tinggi dan tidak dapat terkontrol. Maka dari itu diperlukan pengontrol suhu agar suhu dapat diatur di kisaran suhu optimal untuk pengeringan jamur. Mikrokontroler yang akan mengontrol nyala mati kipas (exhaust) melalui pembacaan sensor suhu akan mempermudah dalam pengeringan jamur. Mikrokontroler juga akan mempermudah operator untuk mengamati bahwa tungku biomassa perlu untuk diisi bahan bakar kembali. Pada penelitian terdapat 2 perlakuan, yaitu perlakuan tanpa kipas dan perlakuan dengan mikrokontroler pengatur kipas. Parameter penelitian ini adalah kadar air bahan, kadar abu bahan, laju pengeringan, dan kebutuhan energi proses pengeringan. Pada penelitian ini didapat hasil kadar air rata-rata perlakuan tanpa kipas sebesar 4,5%, lebih rendah dibanding kadar air rata-rata perlakuan dengan mikrokontroler pengatur kipas sebesar 5,1%. Efisiensi yang diperoleh pada pengeringan jamur tiram tanpa kipas sebesar 56,37%, lebih tinggi dibandingkan dengan efisiensi pengeringan dengan mikrokontroler pengatur kipas yaitu sebesar 24,21%. Mikrokontroler dapat membantu menjaga kestabilan suhu, tetapi kurang efisien dalam penggunaan energi dibanding perlakuan tanpa kipas.
English Abstract
White oyster mushroom (Plaerotus ostreatus) is a wood mushroom that is quite popular and much in demand by the public. The drying process of oyster mushrooms is needed to extend the shelf life of oyster mushrooms and make it easy to process. One example of drying that can be done is to use a biomass-fueled rack-type furnace dryer. This dryer utilizes biomass energy by transferring the heat from under the drying rack. However, this dryer has a disadvantage, namely when using biomass, the heat in the drying chamber will be very high and cannot be controlled. Therefore it is necessary to control the temperature so that the temperature can be set in the optimal temperature range for drying mushrooms. A microcontroller that will control the on-off of the fan (exhaust) through temperature sensor will make it easier to dry mushrooms. The microcontroller will also make it easier for the operator to oversee that the biomass furnace needs to be refueled. In this study there were 2 treatments, that is treatment without a fan and treatment with a fan that controlling microcontroller. The parameters of this research are the moisture content of the material, the ash content of the material, the drying rate, and the energy requirement of the drying process. In this study, the results obtained that the average water content of the fanless treatment was 4.5%, lower than the average water content of the treatment with a fan control microcontroller of 5.1%. The efficiency obtained in drying oyster mushrooms without a fan is 56.37%, higher than the drying efficiency with a fan controlling microcontroller, which is 24.21%. Microcontroller can help maintain temperature stability, but is less efficient in energy use than treatment without a fan.
