Abstract
Perkembangan trend bisnis komoditas kopi semakin meningkat dibuktikan dengan peningkatan konsumsi kopi penduduk Indonesia. Persaingan antar produsen pengolah kopi menjadi tantangan sebagai pelaku bisnis untuk mencapai kemenangan pasar dan memberikan jaminan kualitas produk yang terbaik kepada konsumen. Mengingat pentingnya kualitas produk sebagai pertimbangan dalam keputusan pembelian untuk memenuhi kebutuhannya. Maka, penelitian ini merupakan studi kasus analisis pengendalian kualitas pada produsen pengolah kopi lokal yakni UMKM Ayu Putri Wilis. Berdasarkan kondisi lapang, UMKM ini merupakan pengolah kopi robusta asli dari perkebunan lereng Gunung Wilis yang berhasil mengekspor produknya. Namun, pada proses pengolahan pasca panen belum dilakukan dengan maksimal sehingga dapat menurunkan mutu bahan biji kopi. Tujuan penelitian ini, yaitu menganalisis faktor-faktor yang mempengaruhi cacat produk, mengukur tingkat pengendalian kualitas dan kapabilitas proses pengolahan produk, menganalisis upaya perbaikan kualitas. Penelitian ini merupakan penelitian deskriptif dengan pendekatan kuantitatif. Data yang digunakan dalam penelitian ini yaitu data primer dan sekunder, sedangkan metode pengumpulan data dengan wawancara, kuesioner, observasi, dan dokumentasi. Untuk menganalisis kualitas menggunakan jenis data atribut dengan jumlah sampel 128, sedangkan responden penelitian menggunakan key informan. Analisis data menggunakan metode Six Sigma dengan batasan pada tahap define, measure, analyze, dan improvement. Dari hasil penelitian, diketahui bahwa faktor yang mempengaruhi kerusakan produk yaitu faktor manusia, metode, mesin, bahan baku, dan lingkungan. Jenis defect tertinggi yaitu biji tidak utuh sebesar 64,8 %. Nilai DPMO yaitu 38.000 dalam satu juta kesempatan dan nilai level sigma 3,27 (rata-rata industri di Indonesia). Sedangkan nilai final yield sebesar 88,35 % dengan nilai indeks Cp sebesar 1,09 maka kemampuan proses dikategorikan cukup mampu dalam memenuhi standar kualitas produk. Usulan perbaikan pada faktor manusia dibutuhkan rasa disiplin, tanggung jawab, serta motivasi pada pekerja. Faktor metode diperlukan kontrol proses pasca panen saat penjemuran dan kontrol sortasi biji kopi beras. Pada faktor mesin dilakukan dengan pengaturan setelan kecepatan mesin huler dan perawatan berkala. Pada faktor bahan baku perlu ditetapkan Standar Operasional Prosedur (SOP) bahan baku. Sedangkan pada faktor lingkungan perlu perawatan kebun kopi agar segera diketahui adanya hama dan menjaga kebersihan bahan baku selama proses pengolahan kopi. Berdasarkan hasil penelitian, disarankan produsen agar dilakukan evaluasi proses sortasi dan grading setelah penjemuran kopi, karena pada proses tersebut merupakan proses kunci yang banyak menghasilkan cacat, selain itu perlu penetapan SOP bahan baku yang sesuai dengan syarat mutu kopi pada SNI 01-2907-2008.
English Abstract
The development of the coffee commodity business trend is increasing as evidenced by the increase in coffee consumption of the Indonesian population. Competition between coffee processing producers is a challenge as business players to achieve market victory and guarantee the best product quality to consumers. Given the importance of product quality as a consideration in purchasing decisions to meet their needs. So, this research is a case study of quality control analysis on a local coffee processing producer, namely Ayu Putri Wilis UMKM. Based on field conditions, this UMKM is a native robusta coffee processor from the plantation slopes of Mount Wilis which has successfully exported its products. However, the post-harvest processing has not been carried out optimally so that it can reduce the quality of the coffee bean material. The purpose of this study is to analyze the factors that affect product defects, measure the level of quality control and product processing capability, and analyze efforts to improve quality. This research is a descriptive research with a quantitative approach. The data used in this study are primary and secondary data, while the data collection methods are interviews, questionnaires, observation, and documentation. To analyze the quality using attribute data types with a sample size of 128, while the research respondents used key informants. Data analysis uses the Six Sigma method with limitations on the define, measure, analyze, and improvement stages. From the results of the study, it is known that the factors that influence product damage are human factors, methods, machines, raw materials, and the environment. The highest type of defect was seeds that were not intact at 64.8%. The DPMO value is 38,000 in one million opportunities and the sigma level value is 3.27 (the industry average in Indonesia). While the final yield value is 88.35% with a Cp index value of 1.09, the process capability is categorized as quite capable of meeting product quality standards. Proposed improvements to human factors require a sense of discipline, responsibility, and motivation for workers. The method factor is needed to control the post-harvest process during drying and control the sorting of rice coffee beans. On the engine factor, it is done by adjusting the speed of the upstream engine and periodic maintenance. On the raw material factor, it is necessary to set Standard Operating Procedures (SOP) for raw materials. Meanwhile, on environmental factors, it is necessary to take care of the coffee garden so that pests are immediately identified and maintain the cleanliness of raw materials during the coffee processing process. Based on the results of the study, it is recommended that producers evaluate the sorting and grading process after drying coffee, because this process is a key process that produces many defects, besides that it is necessary to determine the SOP for raw materials in accordance with the coffee quality requirements in SNI 01-2907-2008.
