Abstract
Formula enteral adalah salah satu alternatif formula enteral standar karena terbuat dari bahan makanan sehari–hari, kaya akan fitonutrien, lebih bervariasi sesuai daftar bahan penukar dan harga lebih terjangkau. Namun karena bentuk formula enteral homemade cair, maka terkendala pada masa simpannya. Pengeringan adalah solusi untuk menghasilkan formula enteral dalam bentuk bubuk dengan masa simpan lebih lama dan aman dikonsumsi. Salah satu syarat formula enteral dengan komposisi umum untuk orang Indonesia adalah nilai gizi karbohidrat berkisar antara 60 – 70%. Tujuan penelitian untuk mengetahui perbedaan nilai gizi karbohidrat pada formula enteral homemade bubuk dengan formula enteral komersial. Desain metode penelitian quasi- experiments posttest only control group design menggunakan rancangan acak lengkap dalam tiga perlakuan dan tiga kali pengulangan. Terdiri dari sembilan sampel penelitian yaitu formula enteral homemade bubuk dan dua jenis formula enteral komersial. Formula enteral homemade terdiri dari susu skim bubuk, putih telur, yoghurt, madu, minyak VCO dan maltodekstrin. Nilai gizi karbohidrat dianalisis dengan menggunakan metode by difference oleh tenaga laboran. Kadar karbohidrat tertinggi pada kelompok perlakuan A1 (77.2g, AKG 25.7%). Sedangkan kadar karbohidrat terendah pada kelompok perlakuan FB1 (73.2g, AKG 24.4%). Rata–rata kandungan nilai gizi karbohidrat ketiga jenis sampel memiliki selisih jumlah kandungan yang hampir sama atau tidak jauh berbeda. Berdasarkan uji analisis statistik One Way Anova dengan Confidence interval 95% (α=0.05) diperoleh nilai p=0.294 (p>0.05) maka dapat disimpulkan bahwa tidak ada perbedaan kandungan nilai gizi karbohidrat pada kedua jenis formula enteral tersebut maka dapat dijadikan acuan dalam pemilihan dan penggunaan formula enteral homemade bubuk untuk memenuhi kebutuhan pasien.
English Abstract
The enteral formula is an alternative to the standard enteral formula because it is made from everyday food ingredients, is rich in phytonutrients, is more varied according to the list of exchange ingredients and is more affordable. However, because of the liquid form of the enteral homemade formula, there are problems with its shelf life. Drying is a solution to produce enteral formulas in powder form with a longer shelf life and safe for consumption. One of the requirements for enteral formulas with a general composition for Indonesians is that the nutritional value of carbohydrates ranges from 60-70%. The purpose of the study was to determine the difference in the nutritional value of carbohydrates in the homemade powder enteral formula with the commercial enteral formula. The research method design was quasi-experiments posttest only control group design using a completely randomized design in three treatments and three repetitions. Consisting of nine research samples, namely homemade powder enteral formula and two types of commercial enteral formula. Homemade enteral formula consists of powdered skim milk, egg white, yogurt, honey, VCO oil and maltodextrin. The nutritional value of carbohydrates was analyzed using the by difference method by laboratory personnel. The highest carbohydrate content was in the treatment group A1 (77.2g, RDA 25.7%). While the lowest carbohydrate content was in the FB1 treatment group (73.2g, RDA 24.4%). The average content of carbohydrate nutritional value of the three types of samples has a difference in the amount of content that is almost the same or not much different. Based on the One Way Anova statistical analysis test with 95% Confidence interval (α=0.05), p value = 0.294 (p>0.05) it can be concluded that there is no difference in the nutritional value of carbohydrates in the two types of enteral formulas, so it can be used as a reference in the selection and the use of homemade powdered enteral formulas to meet patient needs.
