Abstract

Cabai Merah Besar (Capsicum annum L.) adalah salah satu komoditas sayuran yang bernilai ekonomis tinggi sehingga berpotensi untuk dikembangkan secara intensif melalui pola usaha tani berwawasan agribisnis. Namun, meningkatnya kebutuhan cabai dalam kondisi segar menyebabkan diperlukannya penanganan pasca panen yang baik, terutama selama proses transportasi. Penanganan faktor selama proses transportasi yang kurang baik dapat menyebabkan kerusakan mekanis dan fisiologis. Penelitian ini bertujuan untuk mengetahui pengaruh jenis kemasan dan variasi jumlah tumpukan terhadap cabai merah Besar (Capsicum annum L.) selama proses simulasi transportasi menggunakan meja getar sehingga dapat memberikan rekomendasi perlakuan terbaik terhadap kesegaran cabai. Penelitian ini menggunakan Rancangan Percobaan RAL (Rancangan Acak Lengkap) model faktorial dengan 2 faktor yaitu faktor perlakuan menggunakan jenis kemasan (karung plastik dan kardus) dan faktor variasi tumpukan karung (2, 4, dan 6 tumpukan). Dari penggabungan 2 faktor perlakuan tersebut, diperoleh 6 unit percobaan dengan pengulangan 3 kali sehingga didapatkan total sebanyak 18 percobaan. Pada akhir percobaan, diambil sampel cabai merah Besar secara acak untuk dilakukan analisis kualitatif dan kuantitatif. Analisis kualitatif dilakukan melalui pengamatan visual terhadap kerusakan mekanis, sedangkan analisis kuantitatif dilakukan dengan melakukan perhitungan persentase susut bobot, persentase kerusakan mekanis, persentase kadar air, dan perubahan kekerasan. Hasil penelitian menunjukkan percobaan kemasan karung dengan 6 tumpukan ke atas mengalami kerusakan mekanis dan susut bobot tertinggi, masing-masing seBesar 25,47% dan 29,86%. Sementara itu, kerusakan mekanis terendah dialami oleh percobaan kemasan kardus dengan 2 tumpukan ke atas seBesar 9,44%. Percobaan kemasan karung dengan 2 tumpukan mengalami susut bobot terendah seBesar 7,98%. Percobaan kemasan kardus dengan 2 tumpukan dinilai sebagai perlakuan terbaik pada pengujian tingkat kekerasan (tekstur) maupun kadar air, dimana didapati tingkat kekerasan cabai seBesar 1,5735 KgF dan kadar air seBesar 84,11%. vii Berdasarkan penelitian ini, dapat disimpulkan bahwa perlakuan jenis kemasan dan jumlah tumpukan memberikan pengaruh terhadap kerusakan mekanis, susut bobot, dan kadar air, namun tidak memberikan pengaruh terhadap tingkat kekerasan (tekstur).

English Abstract

Large Red Chili (Capsicum annum L.) is one of the vegetable commodities with high economic value, thus has the potential to be developed intensively through agribusinessoriented farming patterns. However, the increasing demand for fresh chilies causes the need for good post-harvest handling, especially during the transportation process. Improper handling of factors during the transportation process can cause mechanical and physiological damage. This study aims to determine the effect of packaging type and variations in the number of piles on large red chili (Capsicum annum L.) during the transportation simulation process using a vibrating table so that it can provide recommendations for the best treatment for chili freshness level. This study used a factorial RAL Experiment Design (Completely Randomized Design) with 2 factors, namely the treatment factor using the type of packaging (plastic sacks and cardboard) and the variation factor of stacks (2, 4, and 6 piles). From the combination of the 2 treatment factors, 6 experimental units were obtained with 3 repetitions, bringing the total to 18 experiments. At the end of the experiment, large red chili samples were taken randomly for qualitative and quantitative analysis. Qualitative analysis was carried out through visual observation of mechanical damage, while quantitative analysis was carried out by calculating the percentage of weight loss, percentage of mechanical damage, percentage of moisture content, and changes in hardness. The results showed that the experiment of sack packaging in 6 piles experienced the highest mechanical damage and weight loss with 25.47% and 29.86% respectively. Meanwhile, the lowest mechanical damage was experienced by the cardboard packaging experiment in 2 piles with 9.44%. The sack packaging in 2 piles experienced the lowest weight loss of 7.98%. The cardboard packaging experiment in 2 piles was considered the best treatment for hardness (texture) assessment and water content, where the chili hardness level was 1.5735 KgF and the water content was 84.11%. Based on this research, it can be concluded that the type of packaging and the number of piles have an effect on mechanical damage, weight loss, and moisture content, but have no effect on the hardness level (texture).
