Abstract
Daging sapi adalah salah satu komoditas pangan utama di Provinsi Nusa Tenggara Timur.Tujuan dari penelitian ini adalah untuk: (1) mengkaji rantai pasok pemasaran daging sapi di Kota Kupang; (2) mengkaji nilai tambah pada rantai pasok pemasaran daging sapi di Kota Kupang; dan (3) mengkaji nilai tambah produk olahan abon, dendeng, dan se’i di Kota Kupang. Penelitian dilaksanakan pada bulan November 2018 – Februari 2019 di Kota Kupang. Metode yang digunakan dalam penelitian adalah metode survei. Metode pengambilan sampel dalam penelitian ini adalah teknik purposive sampling dan snowball sampling. Responden yang dijadikan sampel terdiri dari 21 peternak, 7 pedagang ternak, 7 pedagang pemotong ternak, 36 pedagang pengecer, serta 5 pelaku usaha produk olahan daging sapi. Analisis data yang digunakan adalah analisis deskriptif rantai pasok dan analisis nilai tambah menggunakan Metode Hayami. Berdasarkan hasil pemetaan rantai pasok, terdapat dua rantai pasok pemasaran daging sapi di Kota Kupang. Nilai tambah pada masing-masing lembaga pemasaran daging sapi adalah Rp 230.453,89/kg untuk peternak, Rp 9.649,54/kg untuk pedagang ternak, Rp 1.455,28/kg untuk pedagang pemotong ternak, serta Rp 2.468,00/kg untuk pedagang pengecer daging sapi. Perolehan nilai tambah produk olahan daging sapi adalah sebesar Rp 32.807,27/kg untuk produk abon, Rp 29.757,67/kg untuk produk dendeng, dan Rp 18.804,73/kg untuk produk se’i.
English Abstract
Beef is one of the main food commodities in East Nusa Tenggara Province. Research objectives are to: (1) evaluate the beef supply chain in Kupang Town; (2) evaluate value added on beef marketing supply chain in Kupang Town; and (3) evaluate value added of products namely abon (shredded beef), dendeng (jerky), and se’i (smoked beef) in Kupang Town. The research is conducted in November 2018 – February 2019 in Kupang Town. Method applied is survey method. Methods of sample collection are technique of purposive sampling and snowball sampling. Sample respondents comprise 21 farmers, 7 cattle sellers, 7 cattle butchers and sellers, 36 retailers, and 5 entrepreneurs of beef processing. Data analysis applied are descriptive analysis of supply chain and value added analysis using Hayami Method. Based on the result of supply chain mapping, there are two marketing supply chain of beef in Kupang Town. The value added on each beef marketing institution is IDR 230,453.89/kg for the farmers, IDR 9,649.54/kg for the cattle sellers, IDR 1,455.28/kg for the butchers and sellers, and IDR 2,468.00/kg for the beef retailers, respectively. The value added gains of beef processing products is IDR 32,807.27/kg for shredded beef, IDR 29,757.67/kg for jerky, and IDR 18,804.73/kg for smoked beef.
