Abstract
Penyelenggaraan makanan merupakan bagian pelayanan gizi rumah sakit yang bertujuan untuk menyediakan makanan yang berkualitas sesuai dengan kebutuhan gizi pasien. Pemenuhan kebutuhan gizi pasien dengan pemberian diet yang tepat terutama pada pasien Diabetes Melitus (DM) untuk mencegah komplikasi. Kualitas makanan dapat memenuhi kebutuhan gizi pasien dipengaruhi oleh beberapa faktor dimulai dari perencanaan menu sampai penyajian makanan. Tujuan dari penelitian ini adalah untuk mengetahui perbedaan kandungan energi dan zat gizi makro antara rencana menu dengan sajian menu pada pasien DM di RS UMM. Penelitian ini merupakan penelitian deksriptif. Data dikumpulkan dengan mengobservasi dan menghitung kandungan energi dan zat gizi makro menggunakan nutrisurvey 2007, TKPI, dan DKBM.. Pengolahan data dianalisa menggunakan Ms. Excel 2010 dengan teknik analisis deksriptif dan uji statistik menggunakan SPSS v.16. Hasil penelitian ini menunjukkan menu yang disajikan sebagian besar lebih tinggi dari yang direncanakan yaitu kandungan energi (72%), protein (81%), lemak (54%), dan karbohidrat (72%). Dari hasil uji statistik menggunakan Uji Paired T-Test menunjukkan bahwa terdapat perbedaan antara rencana menu dengan sajian menu pada energi (P= 0,000), lemak (P= 0,392), dan karbohidrat (P=0,003). Hasil uji statistik menggunakan uji wilcoxon menunjukkan bahwa tidak terdapat perbedaan yang signifikan antara rencana menu dengan sajian menu pada protein (p=0,083). Rumah sakit belum bisa menyajikan makanan yang sesuai dengan rencana menu terutama kandungan protein.
English Abstract
Dietary service is a part of hospital nutrition service that aims to provide high-quality food according to the nutritional needs of patients. Nutritional fulfillment by providing the correct diet, particularly for the patients with Diabetes Mellitus (DM) in order to prevent complications. The food quality can fulfill the nutritional needs of patients affected by several factors starting from the menu planning to food serving. The objective of this study was to demonstrate the difference of energy content and macronutrients between the planned menu and the served meal of the patients with DM at UMM Hospital. This study was conducted using a descriptive approach. The data were collected by observing and calculating the energy content and macronutrients using Nutrisurvey 2007, TKPI, and DKBM. The data were analyzed using Ms. Excel 2010 with descriptive technique and statistical test performed using SPSS v.16. The result of this study is found that the served menu is mostly higher than planned, namely energy content (72%), protein (81%), fat (54%) and carbohydrate (72%). The statistical test using Paired T-Test revealed that there is a difference of content between the planned menu and the served meal on the energy (P= 0,000), fat (P= 0,392), and carbohydrate (P=0,003). According to the statistical exam using the Wilcoxon test indicated that the significant difference between planned menu and served meal on the protein (p=0,083) is nowhere to be found. The hospital has yet to be able to serve the food according to the menu plan, particularly the protein content.
