Abstract
Penelitian ini bertujuan untuk mengetahui kondisi persaingan yang terjadi dalam industri coffee shop dan bagaimana Amstirdam coffee shop menggunakan strategi inovasi untuk menghadapi persaingan tersebut. Metode yang digunakan dalam penelitian ini adalah deskriptif kualitatif. Pengumpulan data pada penelitian ini menggunakan metode wawancara, observasi, dan dokumentasi. Berdasarkan analisis lima kekuatan porter posisi terkuat terletak pada menghadapi pendatang baru dan menghadapi produk substitusi. Berdasarkan kanvas inovasi dari Amstirdam coffee shop strategi inovasi diterapkan pada aspek teknologi, sumber daya manusia, dan produk untuk menghadapi persaingan.
English Abstract
The objective of this research is to understand the competition condition in the coffee shop’s industry and about Amstirdam coffee shop’s innovation strategy to confront the competition. The method used in this research is descriptive qualitative. The data gathering method used interview, observation, and documentation. Based on the Porter`s five force analysis result, the strongest position is to face the newcomer and to face substitution product. Based on Amstirdam coffee shop’s innovation canvas innovation strategy used in technological aspect, human resource aspect, and product aspect to confront the competition.
