Abstract
Perkembangan dibidang riset dan teknologi saat ini menunjang berbagai kemajuan terhadap beberapa sektor pertanian maupun peternakan di Indonesia, salah satunya penelitian pada sapi potong. Penelitian eksploratif maupun penelitian lanjutan terhadap sapi potong dilakukan untuk mengetahui berbagai aspek, diantaranya status kesehatan maupun produktivitas ternak sapi. Penelitian ini merupakan penelitian eksploratif yang bertujuan untuk mengetahui pengaruh lama waktu transportasi terhadap kadar MDA dan profil protein jantung sapi pasca penyembelihan. Metode yang digunakan dalam penelitian ini adalah pengukuran kadar MDA dengan uji TBARs dan analisis profil protein menggunakan uji SDS-PAGE. Hasil penelitian menunjukkan rata-rata kadar MDA dengan durasi 20-35 menit adalah 501,5 ng/ml dan rata-rata kadar MDA dengan durasi 35-50 menit adalah 475,27 ng/ml. Analisis kadar MDA jantung sapi menunjukkan rasio prevalensi (RP) = 0,622 dengan hasil uji Chisquare menunjukkan adanya pengaruh waktu transportasi terhadap peningkatan kadar MDA jantung sapi paca penyembelihan. Lama waktu tempuh transportasi 20-35 menit dan 35-50 menit tidak berdampak terhadap profil protein HSP 70 dan HSP 90 pada jantung sapi, jenis-jenis protein yang tampak pada gel merupakan protein fisiologis normal, yaitu albumin, globulin, hemoglobin dan MHC kelas II.
English Abstract
Developments of research and technology support various advancements in several agricultural and livestock sectors in Indonesia, one of which is beef cattle research. Exploratory research as well as further research on beef cattle is carried out to find out various aspects, including health status and productivity of cattle. This research is an exploratory study which aims to determine the effect of transport time on MDA levels and post-slaughter cattle protein profile. The method used in this study was the measurement of MDA levels by testing TBARs and protein profile analysis using the SDS-PAGE test. The results showed that the average MDA level with a duration of 20-35 minutes was 501.5 ng / ml and the average MDA level with a duration of 35-50 minutes was 475.27 ng / ml. Analysis of MDA levels in beef heart showed a prevalence ratio (RP) = 0.622 with Chisquare test results showing the influence of transport time on increasing MDA levels in slaughtering beef cattle. The length of travel time for transportation of 20-35 minutes and 35-50 minutes does not affect the profile of HSP 70 and HSP 90 proteins in cattle heart, the types of proteins seen in the gel are normal physiological proteins, albumin, globulin, hemoglobin and MHC class II.
