Abstract

Indonesia adalah salah satu negara kaya fauna yang bermanfaat bagi manusia salah satunya lebah. Produk lebah antara lain madu, polen, royal jelly, lilin lebah, dan propolis. Sayangnya pasar propolis di Indonesia didominasi produk impor. Beberapa diantaranya impor dari cina dan brazil. Diakui bahwa produksi propolis mentah dalam negeri tergolong cukup, sayangnya masih menghadapi kesulitan untuk mengolahnya karena keterbatas teknologi. Umumnya, propolis di ekstraksi dengan maserasi selama lebih dari 72 jam . Pada penelitian ini, propolis diekstrak menggunakan mesin ekstraktor propolis berbasis ohmic heating, ohmic heating merupakan teknologi ekstraksi dengan memanfaatakan arus listrik yang mengakibatkan bangkitnya panas internal dari bahan sehingga ekstraksi menjadi lebih cepat dan sempurna. Pada penelitian ini menggunakan 4 variasi kuat medan listrik sebesar 40, 50, 60, dan 70 Volt/cm, serta satu sampel kontrol dengan metode maserasi. Adapun parameter hasil ektraksi porpolis yang dianalisa yakni kadar flavonoid yang terdapat pada hasil ekstraksi. Berdasarkan hasil pengukuran terhadap kadar flavonoid yang terkandung dalam hasil ekstraksi, diperoleh kadar flavonoid tertinggi pada perlakuan kuat medan listrik 60 Volt/cm dengan nilai kadar flavonoid sebesar 89,70 mg/ml. Berdasarkan penelitian yang telah dilakukan, dapatdisimpulkan bahwa hasil ektraksi menggunakan metode ohmic heating lebih baik dari pada metode maserasi. Namun, pada penelitian selanjutnya, diharapkan dilakukan pre treatmen terhadap bahan dan dilakukan pengecekan alat saat perubahan variasi.

English Abstract

Indonesia is one of the rich countries in fauna that are beneficial to humans one of them bees. Bee products include honey, pollen, royal jelly, beeswax, and propolis. Unfortunately the market of propolis in Indonesia is dominated by imported products. Some of them import from china and brazil. It is acknowledged that the production of domestic crude propolis is sufficient, unfortunately still facing difficulties to cultivate it due to technology limitations. Generally, propolis is extracted with maceration for more than 72 hours. In this study, propolis extracted using propolis extraction machine ohmic heating, ohmic heating is an extraction technology by utilizing an electric current that resulted in the rise of internal heat from the material so that the extraction becomes faster and perfect. In this study using 4 variations of electric field strength of 40, 50, 60, and 70 Volt/cm, and one control sample by maceration method. The parameters of extraction of porpolis are analyzed in the level of flavonoids contained in the extraction results. Based on the measurements of flavonoid levels contained in the extraction results, obtained the highest flavonoid levels in 60 Volt/cm electric field strength treatment with flavonoid levels of 89.70 mg/ml. Based on the research that has been done, it can be concluded that the extraction result using the ohmic heating method is better than the maceration method. However, in subsequent studies, it is desirable to pre-treatment of the ingredients and be checked for changes in variation.
