Abstract
Penelitian ini dilakukan untuk menentukan formulasi optimal dari kapsul suplemen dari porang (Amorphophallus muelleri Blume) dengan menggunakan metode permukaan respons (Response Surface Methodology/RSM) rancangan Box-Behnken (Box-Behnken Design/BBD). Variabel yang diamati untuk menentukan formulasi optimal adalah proporsi tepung porang, tepung inulin, tepung κ-karagenan, dan tepung mocaf. Respon yang diamati pada formulasi optimum adalah kadar serat larut dan daya serap air dari isi kapsul suplemen. Regresi polinomial orde kedua digunakan untuk analisa data. Hasil yang didapatkan menunjukkan bahwa formulasi optimum untuk kapsul suplemen porang adalah tepung porang 85%, tepung inulin 12%, κ-karagenan 1,03%, dan mocaf 1,97% dengan kadar serat larut 36,64% dan daya serap air 39,97 g air/g. Formulasi ini diprediksi dapat memberikan respon kadar serat larut 51,07% dan daya serap air 43,40 g air/g, menunjukkan adanya perbedaan signifikan pada respon kadar serat larut namun tidak ada perbedaan signifikan pada respon daya serap air pada taraf perbedaan 5%.
English Abstract
This study is conducted to determine the optimum formulation of yellow konjac (Amorphophallus muelleri Blume) dietary supplement using Response Surface Methodology. A Box-Behnken Design was used as an experimental design to determine the effect of three independent variables, yellow konjac flour, inulin powder, and κ-carrageenan powder for the dietary supplement formulation. The assessed characteristics for the optimum formula were soluble fiber content and water absorbing capacity of the supplement. A second order polynomial regression model was used for analysis of the experimental data. It was found that the optimum formulation for yellow konjac dietary supplement is 85% yellow konjac flour, 12% inulin powder, and 1.03% κ-carrageenan powder with addition of 1.97% mocaf flour as filler. This formulation resulted in 36.64% soluble fiber content and 39.97 g water/g water absorbing capacity. The predicted optimum response were 51.07% soluble fiber content and 43.40 g water/g water absorbing capacity, showing significant difference for the soluble fiber content but insignificant difference for the water absorbing capacity at 5% difference level.
