Abstract

Betasianin merupakan pigmen pemberi warna merah, biru, atau keunguan pada sayuran, bunga, dan buah. Cara untuk memperoleh pigmen betasianin pada kulit buah naga salah satunya adalah dengan proses ekstraksi dengan menggunakan metode metode Microwave Assisted Extraction (MAE) dengan daya 100 watt untuk memaksimalkan dan mempersingkat waktu ekstraksi. Dalam tahap pengambilan pigmen betasianin digunakan metode Rancangan Acak Kelompok dengan 2 faktor perlakuan yaitu lama ekstraksi (T) yang terdiri atas 3 level (T1, T2, dan T3 masing – masing 5, 10, dan 15 menit) dan faktor kedua yaitu rasio bahan : pelarut (R) yang terdiri atas 2 level (R1 dan R2) masing – masing 1:20 dan 1:30 (b/v). Masing-masing perlakuan diulang sebanyak 3 kali sehingga diperoleh 18 satuan percobaan. Dilanjutkan dengan uji DMRT (Duncan Multiple Range Test) jika terdapat interaksi antara kedua faktor atau dilakukan uji lanjut BNT. Dari penelitian yang telah dilakukan, diperoleh perlakuan terbaik adalah perlakuan dengan lama ekstraksi 5 menit dan rasio bahan : pelarut 1:30 (b/v) dengan kisaran suhu ±60 oC menghasilkan karakteristik terbaik dengan nilai total betasianin 0.4120mg/100g, nilai pH 2.25, total rendemen sebanyak 15.11%, tingkat kecerahan (L*) 20.4, intensitas warna merah (a*) 10.8, dan intensitas warna kuning (b*) 6.5. Hasil penelitian menunjukkan bahwa pada analisa nilai pH dengan faktor lama ekstraksi dengan microwave dan rasio bahan : pelarut memberikan pengaruh yang signifikan (α 5%) dan terdapat interaksi

English Abstract

Betasianin a giver pigments in red, blue, or purple on vegetables, flowers, and fruit. Ways to obtain betasianin pigment in the skin of the dragon one of which is the extraction process using the method of Microwave Assisted Extraction (MAE) with 100 watts of power to maximize throughput and shorten the time of extraction. In the collection phase, the pigment betasianin used method of randomized block design with 2 factors, namely the time of extraction (T) consisting of 3 levels (T1, T2, and T3 respectively there is 5, 10, and 15 minutes) and the second factor is the ratio of materials : solvent (R) which consist of 2 levels (R1 and R2) there is 1:20 and 1:30 (w/v). Each treatment was repeated 3 times to obtain 18 units of the experiment. Followed by DMRT (Duncan Multiple Range Test) if there is interaction between the two factors or further test BNT. From the research that has been done, the best treatment is obtained by the time of extraction treatment of 5 minutes and the ratio of materials : solvent 1:30 (w/v) with a temperature range of ± 60°C produce the best characteristics with a total value betasianin 0.4120mg/100g, 2.25 pH value , total yield of as much as 15.11%, the level of brightness (L*) 20.4, the intensity of the red color (a*) 10.8, and the intensity of the yellow color (b*) 6.5. The results showed that the pH value by a factor analysis time of extraction with microwave and ratio of materials : solvents have a significant influence (α 5%) and there is interaction
