Abstract
Kota Batu merupakan kota penghasil buah apel Manalagi dengan tingkat panen mencapai 17,05 ton/hektar/tahun, sehingga banyak sekali UKM di Kota Batu yang menggunakan buah apel sebagai bahan baku utamanya. CV. Segar Buah Hutama adalah salah satu UKM yang memproduksi sari apel dengan merk dagang “Dewata” dan mulai beroperasi pada Juni 2012. Salah satu masalah yang dihadapi oleh CV Segar Buah Hutama adalah manajemen persediaan bahan baku dan bahan pengemas yang tidak terstruktur, sehingga perusahaan sering mengalami kekurangan persediaan. Tujuan dari penelitian ini adalah untuk mengetahui pengendalian persediaan di CV. Segar Buah Hutama dengan menerapkan metode Material Requirement Planning, menentukan metode lot sizing terbaik dan menentukan jumlah pesanan optimum yang digunakan oleh CV. Segar Buah Hutama. Metode Material Requirement Planning (MRP) digunakan dalam penelitian ini untuk merencanakan kebutuhan bahan baku dan bahan pengemas sari apel yaitu buah apel, gula pasir, cup plastik dan cover cup. MRP membutuhkan metode penentuan ukuran lot (lot sizing) yang akan menyatakan jumlah bahan baku yang harus dipesan untuk satu periode. Untuk menentukan metode lot sizing yang terbaik adalah dengan membandingkan total biaya persediaan yang dikeluarkan untuk tiap-tiap metode tersebut. Teknik lot sizing yang dibandingkan yaitu Economic Order Quantity (EOQ), Lot for Lot (LFL) dan Part Period Balancing (PPB). Hasil penelitian menunjukkan bahwa dengan menerapkan MRP, CV. Segar Buah Hutama dapat menjalankan jadwal produksi tepat waktu. Teknik lot sizing yana paling tepat untuk CV. Segar Buah Hutama adalah teknik PPB dengan penghematan biaya persediaan sebesar 25,07% dari teknik LFL, 57,65% dari metode perusahaan dan 26,60% dari teknik EOQ. Kuantitas pesanan optimum untuk masing-masing bahan baku dan bahan pengemas sesuai perhitungan EPP yaitu 66.674 cup untuk cup plastik, 57 roll untuk cover cup, 3.064 kg untuk apel, dan 764 kg untuk gula pasir. Perusahaan disarankan untuk melakukan pengendalian persediaan dengan menggunakan Material Requirement Planning agar proses produksi dapat terjadwal tepat waktu dan biaya persediaan dapat diminimalisir. Pada penelitian-penelitian selanjutnya mengenai pengendalian persediaan, diharapkan agar menggunakan lebih banyak alternatif teknik lot sizing untuk dibandingkan dengan tetap menyesuaikan dengan jenis produk perusahaan.
English Abstract
Batu City is one of area that produces Manalagi apple with high productivity. Apple harvest levels in Batu City reach 17.05 tons/hectare/year. So, many manufacturers in Batu City use apples as the main material of their product. One of manufacturer that produces apple-based product is CV. Segar Buah Hutama. CV Segar Buah Hutama produces apple cider with brand “Dewata” and began operations on June 2012. One of the problems faced by CV. Segar Buah Hutama is uncertainties of raw and packaging materials management. The purposes of this study is to determine inventory management in CV. Segar Buah Hutama using Material Requirement Planning, determine the best lot sizing technique and optimum order quantity in CV. Segar Buah Hutama. Material Requirement Planning (MRP) method in this study is used to plan the requirement of raw and packaging materials of apple cider, that is apple, granulated sugar, plastic cup, and cup cover. MRP requires lot sizing techniques that states the amount of materials that must be ordered in a single period. The way to determine the best lot sizing technique for the company is to compare the total of inventory costs for each technique. The costs that used in this research are ordering cost and holding cost. In this study, the three lot sizing techniques that will be compared to get the lowest inventory costs are Economic Order Quantity (EOQ), Lot for Lot (LFL) and Part Period Balancing (PPB). The result of this study are with using MRP, the production schedule can run on time. The best lot sizing technique for CV. Segar Buah Hutama is PPB with 25.07% cost savings from LFL, x 57,65% cost savings from company method and 26.60% from EOQ. The optimum order quantity order is based from the calculation of EPP, that is 66.674 cup for plastic cup, 57 roll for cup cover, 3.064 kg for apple, and 764 kg for granulated sugar. The company is advised to plan inventory management by using Material Requirement Planning in order to make production process more scheduled and able to minimize inventory costs. The further study about inventory management are expected to use more varies of lot sizing techniques to be compared and to determine the best lot sizing technique to the company
