Abstract

Apel (Malus sylvestris Mill) sebagai salah satu buah komersial yang banyak dikonsumsi oleh masyarakat, merupakan tanaman yang memiliki nilai ekonomis cukup tinggi sebagai komoditi pasar dunia, buahnya digemari dan bermanfaat sebagai salah satu sumber vitamin. Apel merupakan komoditas pertanian yang cukup diminati untuk dibudidayakan dikalangan petani. Produk ini banyak digemari di semua lapisan atau stata sosial. Sehingga sebagai produk konsumsi, permintaan akan komoditas apel hampir tidak pernah mengalami stagnasi baik untuk kebutuhan domestik maupun ekspor. Mengingat besarnya resiko kerusakan pada produk buah dan sayur, maka proses pengadaan, penyimpanan dan pengendalian persediaan menjadi faktor yang mempengaruhi mutu dari produk tersebut. Dari keseluruhan proses tersebut akan menimbulkan beberapa variabel biaya yang nantinya akan dipertimbangkan dalam optimasi persedian produk tersebut. Beberapa variabel yang dipertimbangkan yaitu purchasing cost, ordering cost, dan holding cost. Tujuan penelitian ini adalah untuk menentukan kuantitas persediaan dan total biaya persediaan apel lokal dan membandingkan total biaya persediaan apel lokal yang telah diterapkan di Giant supermarket cabang Gresik Kota Baru. Salah satu metode yang dapat digunakan untuk menentukan kuantitas persediaan adalah Economic Order Quantity Probabilistik. Dengan adanya tingkat permintaan barang yang bervariasi dari waktu ke waktu dimungkinkan terjadinya kekurangan barang pada saat masa lead time karena permintaan barang yang tidak diharapkan atau karena waktu pengiriman barang yang lebih lama dari yang diharapkan. Hasil menunjukkan bahwa jumlah pemesanan optimal pada periode 20 minggu yaitu bulan Januari – Mei 2015, apel malang B sebesar 50,45 kg dan apel manalagi AB sebesar 55,63 kg setiap minggu dengan total biaya persediaan untuk apel malang B sebesar Rp. 7.456.810,5,- dan untuk apel manalagi AB sebesar Rp. 3.851.388. Sehingga total biaya untuk keseluruhan jenis apel lokal dengan metode EOQ probabilistik selama 20 minggu sebesar Rp. 11.308.198,7. Sedangkan untuk total biaya persediaan apel lokal dengan metode yang diterapkan oleh perusahaan Rp. 12.000.483,-.

English Abstract

Apples (Malus sylvestris Mill) as one of the commercial fruit consumed by many people, is a plant that has a high economic value as a commodity market of the world, his popular and useful as a source of vitamins. Apple is agricultural commodity that is preferred for propagation among farmers. This product widely favored in all social layers or states. So as a costumer product, the demand for commoditie apples almost never stagnated both for domestic and export needs. Given the magnitude of the risk of damage to the fruit and vegetable products, the proces of procurement, storage and inventory control becomes a factor that affects the quality of the product. The whole process will cause some variable costs, its also will be considered in the optimization of supply of the product. Some variables was considered, are purchasing cost, ordering cost and holding cost. The purpuse of this study is to determine the quantity of inventory and the total cost of inventory local apples and compare the total cost of inventory local apples that have been applied in the Giant supermarket branch Gresik Kota Baru One of methods can be used to determine the quantity of inventory is the Economic Order Quantity Probabilistic. The level of demand for goods that vary from time to time possible shortage of goods during the period of lead time because demand for goods that are not expected or because the delivery time is longer than expected.. The results show that the number of reservations optimal in period 20 weeks the January - May 2015 , apples malang Bof 50,45 kg and apples manalagi AB of 55,63 kg every week with the total cost of supplies for apples malang B
