Abstract
KUD “DAU” merupakan salah satu industri susu pasteurisasi yang berlokasi di jalan Sido Makmur No 26 Desa Mulyoagung Kecamatan Dau, Kabupaten Malang. Akhir-akhir ini terjadi penurunan kualitas susu pasteurisasi yang disebabkan banyak hal seperti rendahnya mutu bahan baku, karyawan yang kurang kompeten, dan lain sebagainya. Oleh karena itu, diperlukan penelitian tentang analisis elemen kunci dan alternatif perbaikan mutu susu pasteurisasi dengan tujuan untuk memformulasikan struktur elemen kunci dan menentukan perbaikan mutu susu pasteurisasi yang harus dilakukan oleh KUD DAU. Metode yang digunakan adalah ISM dan Fuzzy ME-MCDM. Metode ISM digunakan untuk menentukan elemen kunci, dimana terdapat 4 elemen yang diteliti yaitu elemen kebutuhan, kendala, tujuan dan lembaga yang terlibat. Metode Fuzzy ME-MCDM digunakan untuk menentukan alternatif kegiatan dalam pebaikan mutu, dimana terdapat 3 alternatif yaitu perbaikan mutu bahan baku, perbaikan proses produksi dan perbaikan penanganan pasca produksi. Penelitian ini menggunakan tiga pakar sebagai respondennya. Hasil analisa data ISM yang dilakukan menunjukkan bahwa yang menjadi elemen kunci pada kebutuhan program adalah teknologi produksi, standarisasi mutu susu pasteurisasi, permodalan, dan karyawan yang kompeten. Untuk kendala program yaitu modal, sarana dan prasarana, infrastruktur, kualitas, SDM, teknologi, dan kelembagaan. Untuk tujuan program yaitu dengan meningkatkan penguasaan teknologi, meningkatkan nilai tambah susu pasteurisasi, meningkatkan SDM yang kompeten, dan perbaikan ekonomi KUD. Untuk lembaga yang terlibat yaitu Dinas Koperasi, Perguruan Tinggi, serta Peneliti dan Penyuluh. Hasil analisa data dengan Fuzzy ME-MCDM menunjukkan bahwa alternatif kegiatan yang harus dilakukan adalah perbaikan mutu bahan baku dan perbaikan proses produksi.
English Abstract
KUD “DAU” is one of pasteurized milk industry which located at Sido Makmur Street number 26, Mulyoagung, Dau, Malang regency. Nowadays, there’re a lot of case about the pasteurized milk reduction qualities that caused by some factors, like the low quality of raw materials, not competent employees, and etc. So, there be required a research about the analysis of key elements and alternative of the quality improvement of pasteurized milk with the aims to formulate the structure key elements and to decide the quality improvement of pasteurized milk at KUD DAU, Malang. The methods that applied ISM and Fuzzy ME-MCDM. ISM method is used to decide the key element, which consist of necessity element, constrains, objective, and the institution involved. Fuzzy ME-MCDM method is used to decide the alternative actions for improving the product qualities, which consist of 3 alternatives, which are improving the raw materials quality, improving the production process, and improving after production handling. This research are taking three proficients to be the respondents. From the ISM analysis, it can be seen that the key elements of necessity program are production technology, standardization the quality of pasteurized milk, capital, and the competent employees. Moreever, the constrains are capital, facilities, infrastructure, quality, human resources, technology, and institusional. Furthermore, the objectives program are for improving technology control, improving for increase the value-added of pasteurized milk, improving the competent human resources, and improving the economic of KUD. In addition, the institusion which involved are Cooperative Agency, College, Researcher and Instructor. In brief, from the results of Fuzzy ME-MCDM it can be concluded that the alternatives action that have to be done are improving the quality of raw materials and improving the production process.
