Abstract
Pulsed Electric Field (PEF) adalah salah satu metode pengolahan pangan non-thermal dengan menggunakan kejutan listrik intensitas tinggi yang diaplikasikan pada bahan yang berbentuk cair. Proses berlangsung antara satu mikrodetik sampai satu milidetik dengan pulsa yang pendek dan tegangan antara 20-80 kV. Aplikasi teknologi PEF digunakan untuk pasteurisasi susu dari mikroorganisme, sehingga mempunyai umur simpan yang lebih panjang serta aman dikonsumsi masyarakat. Tujuan penelitian ini adalah untuk merancang dan membuat alat pasteurisasi susu dengan teknologi Pulsed Electric Field (PEF), mengetahui prinsip kerja pasteurisasi dengan PEF serta mengetahui karakteristik alat pasteurisasi non thermal dengan Pulsed Electric Field (PEF) melalui pengujian secara teknis dan eksperimental dengan produk susu segar. Teknologi Pulsed Electric Field (PEF) terdiri dari empat komponen utama, yaitu: (1) Pembangkit Pulsa Tegangan Tinggi sebagai Pembangkit Pulsa Tegangan Tinggi yang menggunakan transformator flyback, (2) Tangki bahan (Food Tank) sebagai tempat penampungan air susu sebelum dan sesudah proses pasteurisasi, (3) Ruang Perlakuan (Treatment Chamber) sebagai tempat terjadinya pasteurisasi, (4) Meja Penyangga. Pengujian dilakukan di Laboratorium Teknik Prosessing Hasil Pertanian Jurusan Teknik Pertanian, Laboratorium Pengujian Mutu dan Keamanan Pangan (Testing Laboratory of Food Quality and Food Safety) Jurusan Teknologi Hasil Pertanian Fakultas Teknologi Pertanian dan Laboratorium Pengukuran dan Tegangan Tinggi Fakultas Teknik Universitas Brawijaya Malang. Hasil pengujian menunjukkan bahwa pembangkit tegangan tinggi yang dirancang dengan menggunakan flyback transformer mampu menghasilkan tegangan keluaran mencapai 49.480 Volt dengan frekwensi keluaran 50 KHz. Hasil pengujian Total Plate Count menunjukkan bahwa terjadi penurunan jumlah mikroorganisme setelah mengalami proses pasteurisasi dalam waktu satu detik yang mencapai 98.14% dengan kejutan listrik sebesar 49.48 kV serta 97.44% dengan tegangan 43.98 kV, 95.37% dengan tegangan 32.99 kV dan 92.06% dengan tegangan 27.49 kV tanpa merubah warna, rasa dan tidak ada kenaikan suhu yang signifikan.
English Abstract
Pulsed Electric Field (PEF) is one of non thermal food processing method using frightened electric with high intensity which is applied in liquid substances. The process is running between one micro second until one millisecond with short pulse and voltage between 20-80 kV. Application of technology PEF has been used for milk pasteurization from microorganism until has longer age for storage which is save to consumed by a society. The purpose of this research is to design and building pasteurization device with Pulsed Electric Field (PEF) technology, understanding principal work of pasteurization with PEF and understanding characteristic of non thermal pasteurization device with Pulsed Electric Field (PEF) through technical and experimental testing with fresh milk product. Pulsed Electric Field (PEF) technology contain from four main components, those are : (1) high voltage generation pulse as pulse generation which is using flyback transformator, (2) food tank as a container for milk before and after pasteurization process, (3) treatment chamber as a place for pasteurization process, (4) prop table. The trial of research has been held in Agricultural Laboratory of Result and Processing Technique Agricultural Engineering Majors and Testing Laboratory of Food Quality and Food Safety Food Technology majors Agricultural Technology Faculty and Measuring and High voltage Laboratory of Engineer Faculty Brawijaya University of Malang. Testing result showing that high voltage regeneration has been designed with using fly back transformer which is able to produce out put until 49.480 Volt with out frequency till 50 KHz. Total Plate Count of Test result showing that there are decreasing amount of microorganism after pasteurization process in one second of time which is until 98.14% with frightened electric as big as 49.48 kV and 97.44% with voltage 43.98 kV, 95.37% with voltage 32.99 kV and 92.06% with voltage 27.49 kV without color changing, taste and there is no thermal increasing which is significant.
