Abstract

The purpose of this research was to determine the water content, Pb and Cu contamina-tion in the mango and rambutan honey. The method was case study with statistical analysis paired student t-test by two treatments and fifteen replications. The results of water content in mango and rambutan honey was similar (P<0.05) 20.84± 0.84% and 19.94±0.23%. Metal con-tamination of Pb was not detectable and detected metal contamination of Cu was highly signifi-cant different (P>0.01) was 4.90 ± 0.08 mg/kg and 0.19 ± 0.02 mg/kg, for mango and rambutan honey. The conclusion of research was mango and rambutan honey based on the water content, metal contamination of Pb and Cu has good quality because it is below the maximum allowed limit of SNI. Suggestions from this research is source of nectar and honey farms as good as loca-tion away from the highway and sources of heavy metal.
