Abstract

Penelitian ini dilakukan untuk mengetahui pengaruh ekstrak daun Noni (Morinda Citrifolia L.) dalam pakan kualitas fisik daging payudara broiler seperti pH, kapasitas penahan air (WHC), kehilangan masakan (CL), dan kelembutan. Sembilan puluh enam 8-hari broiler ayam tua strain lohmann dan seks yang tidak berbeda (tidak berbeda) digunakan dalam penelitian ini. Ayam broiler akan dipelihara hingga 35 hari. Metode penelitian adalah eksperimental menggunakan desain acak lengkap (CRD) dengan enam perawatan dan empat replikasi, setiap replikasi terdiri dari empat ayam broiler. Perawatan terdiri dari p0 (pakan basal), p1 (pakan basal + tetrasiklin 0,05%), p2 (pakan basal + 0,05% ekstrak daun noni), p3 (pakan basal + 0,1% ekstrak daun noni), p4 (pakan basal + 0,15 % ekstrak daun noni), p5 (pakan basal + 0,2% ekstrak daun noni). Data dianalisis dengan ANOVA dan dilanjutkan dengan uji perbedaan (LSD) yang sedikit signifikan jika ada hasil yang berbeda secara signifikan. Hasil penelitian menunjukkan bahwa ekstrak daun noni tidak memberikan efek signifikan (p & gt. 0,05) pada pH daging, kapasitas tahan air (WHC), kehilangan masakan (CL), dan nyeri. Namun, hasil ini masih dapat diterima secara normal seperti pH antara 5,38-5,57, kapasitas tahan air 34.13-45,64%, kehilangan memasak 33.05-36,97%, tetapi nyeri 16.22-20.57n kurang dapat diterima. Penelitian ini menyimpulkan bahwa suplementasi ekstrak daun Noni (Morinda Citrifolia L.) dalam pakan tidak meningkatkan kualitas fisik daging payudara broiler pada pH, kapasitas tahan air (WHC), kerugian memasak (CL), dan kelembutan.

English Abstract

This research was conducted to know the effect of noni leaves extract (Morinda citrifolia L.) supplementation in feed on physical quality of broiler breast meat such as pH, Water Holding Capacity (WHC), Cooking Loss (CL), and tenderness. Ninety six 8-days old broiler chickens strain Lohmann and undifferentiated sex (unsexed) were used in this research. The broiler chickens will be reared until 35-days old. The research method was experimental using Completely Randomized Design (CRD) with six treatments and four replications, each replication consisted of four broiler chickens. The treatments consisted of P0 (Basal Feed), P1 (Basal Feed + tetracycline 0.05%), P2 (Basal Feed + 0.05% noni leaves extract), P3 (Basal feed + 0.1% noni leaves extract), P4 (Basal feed + 0.15% noni leaves extract), P5 (Basal feed + 0.2 % noni leaves extract). The data were analyzed by ANOVA and continued by Least Significant Difference (LSD) test if there was significantly different result. The results showed that noni leaves extract did not give significant effect (P>0.05) on meat pH, water holding capacity (WHC), cooking loss (CL), and tenderness. However, these results were still acceptable normally such as pH between 5.38-5.57, water holding capacity 34.13-45.64%, cooking loss 33.05-36.97%, but tenderness 16.22-20.57N were less acceptable. The research concluded that supplementation of noni leaves extract (Morinda citrifolia L.) in feed did not increase physical quality of broiler breast meat on pH, Water Holding Capacity (WHC), Cooking Loss (CL), and tenderness.
