Abstract
Pengumpulan data penelitian dilaksanakan mulai 23 Januari sampai dengan 23 Maret 2008 di Laboratorium Teknologi Hasil Ternak, Fakultas Peternakan Universitas Brawijaya Malang. Tujuan penelitian adalah untuk mengetahui pengaruh substitusi bungkil kedelai dengan limbah udang terfermentasi Aspergillus niger pada pakan yang tepat terhadap pH, kadar air, kadar lemak dan kadar protein daging broiler. Hasil penelitian diharapkan dapat dipakai sebagai bahan informasi dan data dasar penelitian-penelitian selanjutnya. Materi penelitian adalah daging broiler yang berumur 35 hari pada bagian Pectoralis mayor (dada). Metode penelitian adalah percobaan dengan Rancangan Acak Lengkap yang terdiri dari 5 perlakuan dan 3 ulangan. Adapun perlakuan tersebut adalah pakan basal dengan substitusi 0% (P0), 5% (P1), 7,5% (P2), 10% (P3), dan 12,5% (P4) Limbah Udang terfermentasi (LUF). Variabel yang diukur adalah : pH, kadar air, kadar lemak dan kadar protein. Data dianalisis dengan sidik ragam dan dilanjutkan dengan Uji Jarak Berganda Duncan’s apabila ada pengaruh antar perlakuan. Hasil penelitian menunjukkan bahwa pengaruh masing-masing perlakuan berbeda sangat nyata (P<0,01) terhadap kadar lemak dan kadar protein, berbeda nyata (P<0,05) terhadap pH dan tidak berbeda nyata terhadap kadar air daging broiler (P>0,05). Disimpulkan bahwa substitusi bungkil kedelai dengan Limbah Udang terfermentasi pada pakan memberikan pengaruh yang sangat nyata terhadap kadar lemak dan protein serta berpengaruh nyata terhadap pH daging broiler tetapi tidak berpengaruh terhadap kadar air daging broiler. Saran perlu adanya penelitian dan kajian lebih mendalam tentang substitusi LUF Aspergillus niger terhadap kualitas kimia daging broiler terhadap profil asam lemak, asam lemak dan kandungan kolesterol daging.
English Abstract
This Research was carried out in the Laboratory of Animal Product Technology, Animal Husbandry Faculty Brawijaya University, Malang since January 23rd until March 23rd, 2008. The objections of research purpose was to know the effect of substitution soybean meal with fermented shrimp wastes by Aspergillus niger in appropriate feed to pH, the water content, fat content and protein content in broiler meat. The research materials was meats of broiler 35 day old at Pectoralis mayor. The research methode of experiment used completely randomized design (RAL) with 5 treatments and 3 repeatly. (P0: feed without substitution of fermented shrimp wastes, P1: feed with 5 % substitution of fermented shrimp wastes, P2: feed with 7.5 % substitution of fermented shrimp wastes, P3: feed with 10 % substitution of fermented shrimp wastes, P4: feed with 12.5 % substitution of fermented shrimp wastes. Variables of this research were pH, the water content, fat content and protein content of broiler meat. Data were analyzed by completely randomized design, if there was a significant effect, it was followed by Duncan’s Multiple Range Test (DMRT). The result of this research showed that the substitution of soybean meal with fermented shrimp wastes by Aspergillus niger on feed meal had highly significant effect (P<0.01) to the fat content and protein content of broiler meat, had significant effect (P<0.05) to pH value of broiler meat but did not have significantly effect (P<0.05) to the water content. The conclusion of research was the substitution of soybean meal with fermented shrimp wastes by Aspergillus niger on feed meal give the had highly significant effect to the fat content and protein content of broiler meat, had significant effect to pH of broiler meat but did not have significantly effect to the water content.
