Abstract

Penelitian dilaksanakan pada bulan Juni sampai Juli 2006 di laboratorium Sumber Sekar dan laboratorium kimia Universitas Muhammadiyah Malang. Penelitian ini bertujuan untuk mengetahui kualitas kimia daging kambing mana yang lebih baik antara kambing peranakan Etawah (PE) jantan dan kambing peranakan Boer (PB) kastrasi, ditinjau dari (kadar air, protein, lemak, dan kandungan fosfor (P) dan kalsium (Ca). Materi yang digunakan adalah daging bagian loin, paha depan dan belakang dari kambing PB kastrasi dan PE jantan umur 8 bulan. Variabel yang diamati adalah kadar air, lemak, protein, kalsium dan fosfor. Metode yang digunakan adalah metode eksperimental dengan analisa yang digunakan adalah uji t untuk kadar air, protein, lemak, kalsium dan fosfor. Hasil penelitian menunjukkan bahwa kadar air daging kambing PB kastrasi berkisar antara 68,19-70,4%, sedangkan kadar air daging kambing PE jantan berkisar antara 70,33-72,13%, kadar lemak daging kambing PB kastrasi berkisar antara 9,68-9,36%, sedangkan kadar lemak daging kambing PE jantan berkisar antara 8,21-8,44%, kadar protein daging kambing PB kastrasi antara 17,68-18,03% sedangkan daging kambing PE jantan antara 16,88-17,46%, kadar kalsium daging kambing PB kastrasi antara 17,96-19,85 mg/100g sedangkan daging kambing PE jantan antara 12,37-15,12 mg/100g dan kadar fosfor daging kambing PB kastrasi antara 142,41-151,35 mg/100g, sedangkan daging kambing PE jantan antara 122,91-142,39 mg/100g. Secara statistik jenis bangsa kambing yang berbeda yaitu kambing PE jantan dan kambing PB kastrasi tidak menunjukkan perbedaan yang nyata (P>0,05) pada kadar air, protein, lemak,kalsium dan fosfor. Kesimpulan dari penelitian ini adalah kadar air daging kambing PE jantan lebih tinggi dibandingkan kambing PB kastrasi, tetapi kadar lemak, protein, kandungan kalsium dan fosfor lebih tinggi pada daging kambing PB kastrasi dibandingkan pada kambing PE jantan. Komposisi kimia daging kambing PB kastrasi: kadar air 69,89%; kadar protein 17,91%; kadar lemak 8,98%; kandungan P 151,02 mg/100g dan kandungan Ca 18,81 mg/100g, sedangkan daging kambing PE jantan: kadar air 71,08%; kadar lemak 8,36%; kadar protein 17,12%; kandungan Ca 13,85 mg/100g dan P 134,82 mg/100g. Hasil secara statistik menunjukkan tidak terdapat perbedaan nyata antara kualitas kimia daging kambing PE jantan dan PB kastrasi, maka disarankan untuk mengkonsumsi daging kambing PE jantan. Sedangkan ditinjau dari segi aspek kandungan kadar protein, lemak, kandungan Ca dan P, maka konsumsi daging kambing PB kastrasi lebih baik daripada daging kambing PE jantan.

English Abstract

The aim of this study was to know the chemical quality (moisture, protein, fat, calcium, phosphorus) of male Etawah crossbred and castrated Boer crossbred goat meat. The result expected can be used as further information about the chemical quality of male Etawah crossbred and castrated Boer crossbred goat meat and as future researches. The material of the research were loin meat, front and back thigh of male Etawah crossbred and castrated Boer crossbred goat, these meat parts were the fineground and 10 gram were taken for sample preparation. The result show that the different species of goat statiscally was no significant effect (P>0.05) on moisture, protein, fat, calcium and phosphorus. The chemical quality of male Etawah crossbred and castrated Boer crossbred goat (moisture obtained from vacuum oven, fat from soxhlet, protein from semimicro kejldahl, calcium and phosphorus from Spectrophotometer) is (71,080%, 69,886%; 17,120%, 17,907%; 8,358%, 8,981%; 13,846 mg/100g, 18,811mg/100g; 134,817mg/100g, 151,032mg/100g). The conclution is moisture content from male Etawah crossbred was higher than castrated Boer crossbred, but fat, protein, calcium, and phosphorus content castrated Boer crossbred were higher than castrated Boer crossbred.
