Abstract

Sektor industri adalah sektor yang mampu menggambarkan laju perekonomian suatu daerah. Dan sektor industri pula yang diharapkan akan mampu memberikan value added (nilai tambah) dengan cepat yang pada akhirnya akan memberikan income daerah melalui pendapatan asli daerahnya. Dalam suatu industri terdapat suatu proses produksi untuk menghasilkan suatu barang atau jasa. Proses produksi merupakan suatu kegiatan yang paling penting dalam pelaksanaan produksi. Setiap perusahaan yang menghasilkan produk atau perusahaan-perusahaan yang menyelenggarakan proses produksi akan memerlukan suatu bahan baku yang nantinya akan mengalami proses perubahan jenis, yakni dari bahan baku menjadi poroduk jadi atau setengah jadi. (Nurseto, 2013). Tapi akan terjadi beberapa masalah pada bahan baku. Hal tersebut dikarenakan bahan baku yang tidak terencana dan terkendali akan menyebabkan kemacetan proses produksi dikarenakan kekurangan bahan baku atau kelebihan bahan baku yang akan mengakibatkan penurunan kualitas bahan baku karena lamanya waktu penyimpanan di gudang. Tak terkecuali dengan UD. Ramayana Agro Mandiri. Perusahaan ini merupakan perusahaan yang bergerak di bidang pengolahan buah menjadi produk makanan lainnya. Produk-produk yang disediakan di perusahaan ini adalah produk makanan yang berasal dari apel, nanas, nangka, strawberry, sirsak, dan salak. Penelitian ini bertujuan untuk mengidentifikasi sistem perencanaan dan pengendalian persediaan bahan baku apel pada UD. Ramayana Agro Mandiri, menganalisis peramalan kebutuhan bahan baku apel untuk 2 tahun periode berikutnya, dan untuk menganalisis perencanaan dan pengendalian persediaan bahan baku apel pada UD. Ramayana Agro Mandiri. Dalam penelitian ini menggunakan beberapa alat analisis yakni untuk menganalisis perencanaan menggunakan alat analisis Minitab yang berfungsi untuk meramalkan kebutuhan bahan baku 2 tahun mendatang. Sedangkan untuk pengendalian bahan baku menggunakan alat EOQ untuk mengetahui tingkat persediaan ekonomis, safety stock untuk mengetahui tingkat persediaan pengaman yang harus dilakukan agar tidak terjadi kekurangan atau kelebihan bahan baku, reorder point untuk mengetahui waktu perusahaan akan melakukan pemesanan kembali, TIC untuk mengetahui tingkat biaya persediaan yang harus dikeluarkan dan persediaan maksimal digunakan untuk mengetahui tingkat persediaan maksimal yang haru disediakan oleh pihak perusahaan. Hasil dari penelitian tersebut adalah sistem perencanaan dan pengendalian persediaan bahan baku apel pada UD. Ramayana Agro Mandiri yakni apel yang digunakan dalam proses produksi adalah apel manalagi yang didapatkan dari beberapa supplier apel baik dari Desa Bumiaji maupun di luar Desa Bumiaji. Apel yang digunakan untuk pembuatan keripik apel harus apel yang berkualitas atau memiliki kerusakan kurang dari 20%. Waktu yang dibutuhkan pada saat ii pembelian apel hingga apel tiba di perusahaan adalah 2 hari. Peramalan kebutuhan bahan baku apel periode yang akan datang mengalami peningkatan. Kebutuhan bahan baku apel untuk periode 2 tahun mendatang sebesar 7412,046 Kg rata-rata per bulannya (atau 285,07 Kg per harinya). Jumlah ini lebih besar dibandingkan dengan kebutuhan bahan baku periode sebelumnya dengan rata-rata kebutuhan 7202,33 Kg (atau 277,01 Kg per harinya). Perencanaan dan pengendalian persediaan bahan baku apel pada agroindustri keripik apel UD. Ramayana Agro Mandiri adalah jumlah pemesanan bahan baku apel ekonomis (EOQ / economis order quantity) pada agroindustri tersebut adalah sebesar 7995,56 Kg. Jumlah persediaan pengaman (safety stock) dari persediaan bahan baku apel pada agroindustri tersebut adalah sebesar 616,81Kg. Jumlah pemesanan kembali bahan baku apel (reorder point) adalah sebesar 1.187 yang berarti bahwa perusahaan melakukan pemesanan bahan baku apel setelah tingkat persediaan bahan baku apel mencapai pada tingkat jumlah sebesar 1.187 Kg. Jumlah persediaan maksimum yang harus dilakukan oleh perusahaan adalah sebesar 8612,38 Kg apel. Dan jumlah persediaan minimum yang dilakukan pihak perusahaan adalah 526,299 Kg apel. Total biaya persediaan yang minimal untuk dikeluarkan oleh pihak perusahaan adalah sebesar Rp 373.574 Setelah didapatkan hasil penelitian demikian, maka diharapkan pihak perusahaan untuk lebih memperhatikan keadaan dan kondisi dari persediaan bahan baku apel agar tidak terjadi kelebihan atau kekurangan bahan baku keripik apel dengan cara melakukan 11 kali pemesanan dalam 1 tahun, memperhatikan letak dan tatanan gudang apel, dan diharapkan untuk menambah jumlah supplier apel untuk mengantisipasi keadaan apel yang langka.
