Abstract
Sayur dan buah mengandung vitamin, mineral, zat antioksidan dan serat yang berperan dalam menurunkan risiko penyakit degeneratif. WHO merekomendasikan konsumsi sayur dan buah sebanyak minimal 400 gram setiap hari. Salah satu kelompok umur yang berisiko tidak dapat mencukupi konsumsi sayur dan buah adalah remaja putri seperti mahasiswi baru yang merantau di kota Malang. Penelitian ini bertujuan untuk mengetahui pola konsumsi sayur dan buah serta faktor-faktor yang mempengaruhi pada kelompok mahasiswi baru jurusan gizi perantauan di kota Malang. Metode penelitian yang digunakan adalah metode kuantitatif dan kualitatif. Informan penelitian berjumlah 9 orang dari Jurusan Gizi FKUB. Hasil penelitian menunjukkan informan kurang mengonsumsi sayur dan buah. Faktor-faktor yang mempengaruhi konsumsi sayur dan buah meliputi faktor predisposisi, faktor pendorong dan faktor penguat. Faktor predisposisi tersebut meliputi kemampuan dalam menyiapkan makanan, faktor psikologis, faktor kognitif dan kepercayaan, kebiasaan makan saat anak-anak serta keinginan untuk berpenampilan lebih menarik. Faktor pendorong meliputi kondisi lingkungan fisik seperti akses dan ketersediaan serta karakteristik sayur dan buah (harga, rasa dan tampilan makanan). Faktor penguat meliputi kondisi lingkungan sosial berupa kebiasaan makan keluarga. Kesimpulan dari penelitian ini adalah sebagian besar informan kurang mengonsumsi sayur dan buah serta faktor yang paling berpengaruh yaitu kemampuan informan dalam menyiapkan jenis makanan tersebut.
English Abstract
Vegetables and fruits contains of vitamins, minerals, antioxidants, and dietary fibers that plays a role in reducing the risk of generative diseases. WHO recommends the consumption of vegetables and fruits at least 400 grams per day. One of at risk age group who unable to suffice vegetables and fruits consumption are young women such as female freshmen who lives in a boarding house in Malang. The aims of this study are to know the consumption patterns of vegetables and fruits also to know the affecting factors in female freshman majoring in health nutrition who lived in boarding house in Malang. This study was using qualitative and quantitative method. There were 9 female freshmen from Nutrition Department of Brawijaya University as informants for this study. The study shows that the informants tend to consume less vegetables and fruits than recommendation. Affecting factors in vegetables and fruits consumption are predisposing factors, enabling factors, and reinforcing factors. The predisposing factors include self-efficacy, psychological factors, cognitive factors and beliefs, eating habits during childhood and desire to look more attractive. The enabling factors include physical environment such as accessibility and availability also vegetables and fruits characteristic (price, taste, and the appearance of food). The reinforcing factors include social environment such as family’s eating habit. The conclusions of this study are most of informants consume less vegetables and fruits also the most affecting factors is self-efficacy
