Abstract
Penelitian ini bertujuan untuk mengetahui bagaimana cara penentuan harga jual dan operasional yang diterapkan pada rumah makan Padang dimana pemiliknya merupakan etnis asli Minangkabau ataupun etnis campuran Minangkabau. Penelitian dilakukan dengan metode etnometodologi. Hasil penelitian menunjukkan tiga keunikan pembentukan harga yang diterapkan rumah makan Padang (1) Biaya Produksi, dimana ada salah satu biaya produksi yang sangat diperhatikan oleh pengusaha rumah makan Padang yakni komponen bumbu; (2) Sistem penggajian dimana ada beberapa rumah makan Padang yang menggunakan sistem mato dalam menggaji karyawannya; (3) Zakat, yang diterapkan didalam penentuan harga jual di rumah makan padang dan merupakan kewajiban bagi setiap umat Islam. Berdasarkan 3 keunikan itu menemukan bentuk pembentukan harga khas Minangkabau yaitu Minangkabau price setting.
English Abstract
The purpose of this study is to explore how to setting the sale prices and operational management which applied at Padang restaurant where the owner is Minangkabau ethnicity or mix Minangkabau ethnicity. The study is conducted with etnomethodology. The study show three uniqueness on price setting which applied on Padang restaurant (1) Production cost, where one of them is really considered by owner of Padang restaurant, that is spice. (2) Payroll, where some Padang restaurant using mato system on their payroll. (3) Zakat, applied on price setting in Padang restaurant and as duty for every moslem. Based on 3 uniqueness show Minangkabau special setting the price is Minangkabau price setting.
