Abstract

Perairan Kenjeran merupakan perairan yang berada pada bagian timur kota Surabaya yang sudah tercemar oleh logam berat. Terdapatnya logam berat di Perairan Kenjeran, lebih lanjut memberikan pengaruh terhadap kekerangan yang hidup diperairan. Penelitian ini bertujuan untuk mengetahui konsentrasi logam berat dan tingkat keamanan pangan dari kerang konsumsi yang dimbil dari Perairan Kenjeran. Analisa konsentrasi logam menggunakan ICP-OES dan Mercury Analyzer. Sedangkan untuk analisa data menggunakan rumus Target Hazard Index (THQ), Hazard Index (HI), Target Cancer Risk (TR), Estimated Daily Intake (EDI) dan batas aman konsumsi. Hasil analisis logam menunjukaan logam As, Cd, Cu, Pb dan Se memliki konsentrasi diatas baku mutu dan hanya logam Hg yang mempunyai konsentrasi dibawah baku mutu. Dari hasil perhitungan nilai Target Hazard Quotient (THQ) logam As, Cd, Pb dan Hg berpotensi menyebabkan penyakit non karsinogenik. Berdasarkan perhitungan dari Hazard Index (HI), semua jenis logam pada setiap jenis kerang juga berpotensi menyebabkan penyakit non karsinogenik. Perhitungan Target Cancer Risk (TR), logam As pada semua jenis kerang berpotensi menyebabkan penyakit karsinogenik, sedangkan hasil Health Benevit Value Selenium (HBV-Se) menunjukkan logam Hg tidak berpotensi menjadi toksik dalam tubuh. Batas aman konsumsi untuk anak-anak pada kerang komposit yaitu 1 ekor/hari dan batas aman untuk kerang non komposit yaitu 4 buah/ekor. Untuk dewasa, batas konsumsi kerang komposit

English Abstract

Kenjeran waters is one of the waters located in eastern part of Surabaya that may has been polluted by heavy metals. The presence of heavy metals in thhis waters, eventually affect shellfish that live in this waters. This study aims to evaluate concentration of heavy metals As, Cd, Cu, Pb, Se dan Hg and to assess the level of food safety of shellfish consumption taken from the Kenjeran waters. The heavy metals concentration were analyzed with ICP-OES and Mercury Analyzer, wheras the data were analyzed using the Target Hazard Quotient (THQ), Hazard Index (HI), Target Cancer Risk (TR), Estimated Daily Intake (EDI) and safe limit consumption formula. Metal analysis result show As, Cd, Cu, Pb and Se concentrations were above the quality standard, and only Hg concentration was below the quality standard. Result of THQ indicated that As, Cd, Pb and Hg may pottencially lead to non carcinogenic diseases. Result of HI indicated that all samples may pottencially lead to non carcinogenic disease, whereas result of TR show that As in all samples likely cause potentially carcinogenic diseases. Result of Health Benevit Value Selenium (HBVSe) imply that Hg metal may not have effect on consumer. For safety purpose, the composite shellfish consumption fot toddler suggested was 1 individual/day, whereas for non composite shellfish suggested was 4 pieces/day. For the same reason, the consumption of composite shellfish for adult suggested was 6 individual/day whereas for non composite shellfish suggested was 6 individual/day.
