Abstract

Kelapa merupakan komoditas dengan kandungan nutrisi yang baik dan potensi produksi yang besar di Indonesia (3 juta ton per tahun). Salah satu kandungan nutrisi penting yang dimiliki adalah protein. CV Herba Bagoes adalah perusahaan yang memproduksi Virgin Coconut Oildengan limbah cairskim santan. Tujuan penelitian ini adalah untuk memanfaatkan limbah skim santan menjadi produk baru berupa fraksi kaya protein skim santan.Kadar protein yang tinggi dibutuhkan untuk mendapatkan fraksi kayaprotein yang baik. Peningkatan kadar protein dapat dilakukan denganmelarutkan bahan pengotor (pencucian) dan menggunakan metode pengeringan yang tepat. Rancangan percobaan yang digunakan adalah Rancangan Acak Kelompok (RAK) disusun dengan dua faktor; Faktor I persiapan bahan (tanpa pencucian air, pencucian air 1x 5 menit, pencucian air 2x 5 menit) dan Faktor II metode pengeringan (pengering kabinet, pengering vakum) dengan pengulangan masing-masing perlakuan sebanyak 3 kali. Analisis yang dilakukan meliputi analisis rendemen, analisis daya larut, analisis intensitas warna, analisis kadar protein, analisis total gula, serta analisis proksimat dan analisis kadar serat pada perlakuan terbaik. Hasil dianalisis dengan perhitungan Analisis Ragam (ANOVA) General Linear Modelmenggunakan perangkat lunak Minitab 16.Uji tukey. digunakan untuk membedakan variasi. Perlakuan terbaik ditentukan menggunakan metode Multiple Atribute. Hasil penelitian menunjukkan bahwa frekuensi pencucian memilikipengaruh nyata (α=0,05) terhadap jumlah rendemen, kadar protein, kadar total gula, dan daya larut. Sedangkan metode pengeringan hanya berpengaruh nyata terhadap kadar protein. Interaksi akibat frekuensi pencucian dan metode pengeringan terjadi pada kadar total gula. Fraksi kaya protein skim santan terbaik didapatkan pada perlakuan tanpa pencucian metode pengeringan vakum dengan kadar air 5,58%, kadar protein 43,00%, kadar lemak 13,86%, karbohidrat 30,18%, dan serat 13,93% serta daya larut 29,33%.

English Abstract

Coconut is a commodity with good nutritional content and huge production potential in Indonesia (3 million tons per year). One of the important nutrient content is protein. CV Herba Bagoes is a company that produces Virgin Coconut Oil with liquid waste of skim coconut milk. The purpose of this study was to utilize the waste coconut skim milk into new products in the form of protein-rich fraction of coconut skim milk. High protein levels are required to obtain good protein-rich fraction. Increased protein levels can be done by dissolving the impurities (washing) and using the appropriate drying method. The experimental design used was Randomized Block Design (RBD) prepared by two factors; Factor I preparation of the material (without washing water, washing water 1x 5 minutes, water washing 2x 5 minutes) and Factor II drying method (cabinet drying, vacuum drying) with repetition of each treatment 3 times. Analyzes include rendement analysis, solubility analysis, color intensity analysis, protein content analysis, total sugar analysis, also proximate analysis and fiber content analysis at the best treatment. The results were analyzed by Analyze Variety (ANOVA) General Linear Model using Minitab 16 software.Tukey test was conducted to differentiate variety. The best treatment was determined using Multiple Atribute method. The results showed that the frequency of washing had a significant effect (α = 0,05) on the amount of rendement, protein content, total sugar content, and solubility. While drying method only have significant effect on protein content. The interaction due to the frequency of washing and the drying method occurs at the total sugar content. The best coconut skim milk protein concentrate powder was found in no water washingof vacuum drying method with water content 5.58%, protein content 43.00%, fat content 13.86%, carbohydrate 30.18%, fiber 13.93% and solubility 29.33%
