Indonesian Abstract

Ikan patin (Pangasius hypophtalmus) merupakan salah satu jenis ikan air tawar. Ikan patin berpontensi besar sebagai komoditas ekspor dikarenakan memiliki daging yang berwarna putih yang sangat disukai konsumen. Saat ini teknik iradiasi dikembangkan pada produk pangan karena proses iradiasi dapat menghambat pertumbuhan bakteri patogen. Metode penyimpanan suhu beku dengan teknik iradiasi dapat menjadi kombinasi baik, terutama untuk bahan pangan segar dengan pengolahan yang minim. Penyimpanan suhu beku dapat menghambat laju pertumbuhan mikroba. Penelitian ini bertujuan untuk mengetahui pengaruh dosis iradiasi tertentu dan lama penyimpanan pada suhu beku terhadap jumlah mikroorganisme ikan patin. Penelitian ini dilakukan di Badan Tenaga Nuklir Nasional (BATAN), Jakarta Selatan. Metode penelitian yang dipakai adalah metode deksriptif kuantitatif dengan 2 faktor. Faktor I yaitu dosis iradiasi gamma (0; 2; 4 kGy) pada laju dosis 1 kGy/jam, dan faktor II yaitu lama penyimpanan suhu Beku (0, 7, 14 hari). Tiap parameter perlakuan dilakukan analisa cemaran mikroba meliputi bakteri aerob, koliform, Escherichia coli, Staphylococcous aureus, nilai D10, kadar air dan perubahan pH. Hasil analisa mikroba menunjukkan bahwa kombinasi antara iradiasi gamma dengan dosis 2 kGy dan penyimpanan suhu beku selama 7 hari dapat mereduksi jumlah cemaran bakteri aerob hingga dibawah ambang batas SNI, yaitu sebesar 3.40 × 103 CFU/g serta mereduksi jumlah bakteri koliform menjadi 5.00 × 101 CFU/g. Sedangkan pada penyimpanan 7 hari tidak ditemukan pertumbuhan E. coli. Kombinasi perlakuan dosis iradiasi 2 kGy dan penyimpanan 7 hari dapat mereduksi jumlah S. aureus menjadi 5.90 × 102 CFU/g, tetapi tidak memberikan pengaruh nyata terhadap kadar air dan nilai pH. Hasil analisa D10 menunjukkan bahwa E. coli, dan S. aureus yang diisolasi dari ikan patin yaitu 0.17 kGy dan 0.80 kGy.

English Abstract

“Patin” Fish (Pangasius hypophtalmus) is one type of freshwater fish. “Patin” fish potentially large as export commodities because having the flesh white highly favored consumers. Currently, irradiation makes an improvement for food product, because the right irradiation processing can inhibited the growth of pathogenic bacteria. Freezing storage temperature method and Irradiation technique could be a good combination, especially for type of fresh food or foodstuffs with minimal processing. Storage at freezing temperature could inhibited the growth rate microbe.The purpose of this research is to determine the effect of irradiation dose and the lenght of storage at freezing temperature to the number of microbe in “Patin” fish. This research was conducted at National Nuclear Energy Agency (BATAN), South Jakarta. The research used quantitative descriptive method with 2 factors. The first factor (I) is the dose of gamma irradiation (0, 2, 4 kGy) at dose rate 1 kGy/h, and the second factor (II) is the duration of freezing storage (0, 7, 14 days). The parameters measured in this research were the microbial contamination including aerobic bacteria, coliform, Escherichia coli, Staphylococcus aureus, D10 value, moisture content and pH changes. The result showed that the combination of gamma irradiation with 2 kGy dose and freezing storage temperature for 7 days could elimated the amount of aerobic bacteria contamination until below the Indonesia National Standart (SNI), it was 3.40 × 103 CFU/g and could elimated the number of coliform bacteria up to 5.00 × 102 CFU/g. Meanwhile in the storage of 7 days there was not found the growth of E. coli. The combination of 2 kGy irradiation doses and 7 days storage could elimated the amount of S. aureus to 5.90 × 102 CFU/g, but there was no effect on moisture content and pH. It was found that the D10 value of E. coli and S. aureus isolated from “Patin” fish were 0.17 kGy and 0.80 kGy, respectively.
