Abstract

UD. Sumekar Pratiwi memproduksi keripik umbi-umbian dengan merek dagang “Gerus”. Pengolahan pangan yang higiene penting untuk menjamin kebersihan produk pangan dan mencegah keracunan pangan. Penilaian Good Manufacturing Practices (GMP) dan Sanitation Standard Operating Procedure (SSOP) adalah cara pengukuran kesesuaian penerapan sistem GMP dan SSOP pada unit usaha. Tujuan dari penelitian ini adalah untuk mengukur kesesuaian sistem GMP dan SSOP pada unit produksi agar produk lebih terjamin keamanan dan mutunya. Sistem GMP dan SSOP yang terukur dapat bermanfaat bagi unit usaha sebagai masukan dan bahan pertimbangan dalam perbaikan keamanaan dan mutu produk. Metode penelitian menggunakan pendekatan kualitatif dan kuantitatif. Penyebaran kuesioner penerapan GMP dan SSOP proses produksi keripik singkong, ubi ungu dan ubi madu di UD. Sumekar Pratiwi. Pengambilan nilai penerapan GMP dan SSOP menggunakan kueisoner yang disebar ke tiga responden yaitu pemilik usaha, perwakilan karyawan dan peneliti. Berdasarkan penyebaran kuesioner persentase nilai rata-rata (%) penerapan Good Manufacturing Practices (GMP) dari atasan mendapatkan nilai sebesar 99%, dari karyawan sebesar 92%, dari peneliti sebesar 99% dan nilai rata-rata 96%. Penerapan Sanitation Standard Operating Procedure (SSOP) dari atasan mendapat nilai sebesar 98%, dari karyawan sebesar 93.5%, dari peneliti sebesar 89% dan rata-rata 93.5%. Penerapan sistem GMP dan SSOP di UD. Sumekar Pratiwi sudah baik dan perlu dipertahankan, namun ada beberapa hal yang perlu ditingkatkan seperti sistem pengecekan kandungan air produksi yang digunakan dalam memproses keripik dan penutupan saluran air untuk mencegah hama masuk di area produksi. Kendala yang di alami UD. Sumekar Pratiwi adalah kerusakan bahan baku singkong. Meminimalisir singkong busuk dapat dilakukan dengan beberapa cara yaitu penyimpanan singkong yang tepat dengan menggunakan media sekam atau pasir dan pemilihan supplier bahan baku yang tepat sehingga kualitas bahan baku terjamin.

English Abstract

UD. Sumekar Pratiwi is a food processing business that produces chips under the brand name "Gerus". Hygienic processing of food products is important to ensure the cleanliness of food products and prevent food disease. Assessment of Good Manufacturing Practices (GMP) and Sanitation Standard Operating Procedure (SSOP) is a method of measuring the suitability of the implementation of the GMP and SSOP systems in business units on a percentage scale (%). The purpose of this research is to measure the suitability of the GMP and SSOP systems in the production unit so that the product is more secure and quality is guaranteed. Measurable GMP and SSOP systems can be useful for business units as input and material for consideration in improving product safety and quality. The research method used is qualitative and quantitative approaches. The data from the distribution of the questionnaires were examined from the aspects of the application of GMP and SSOP from the production process of cassava chips, purple sweet potato and honey yam at UD. Sumekar Pratiwi. Based on the distribution of questionnaires, the percentage average value (%) of the application of Good Manufacturing Practices (GMP) from superiors got a value of 99%, from employees was 92%, from researchers was 99% and the percentage average value of the three assessors was 96%. The percentage of the average value (%) of the application of the Sanitation Standard Operating Procedure (SSOP) from superiors got a score of 98%, 93.5% of the employees, of the researchers 89% and the average percentage of the three assessors was 93.5%. Implementation of GMP and SSOP systems at UD. Sumekar Pratiwi is good and needs to be maintained, however, there are a number of things that need to be improved, such as the water content checking system used in the production process of chips and closing water channels to prevent pests from entering the production area. Constraints experienced by UD. Sumekar Pratiwi is damage to cassava raw materials. Minimizing tangin or rotten cassava can be done in several ways, namely storing the right cassava and selecting the right supplier of raw materials so that the quality of the raw materials is guaranteed.
