Indonesian Abstract

Ester gliserida dari gliserol dengan asam palmitat dapat dibuat melalui reaksi esterifikasi enzimatis. Ester gliserida ini berfungsi sebagai emulsifier. Tujuan dari penelitian ini untuk menentukan kondisi optimum pada pengaruh waktu reaksi, suhu reaksi, dan rasio mol pada esterifikasi gliserol dengan asam palmitat menggunakan katalis enzim lipase Candida rugosa amobil. Reaksi esterifikasi menggunakan pelarut n-butanol dan 0,1 g lipase amobil divariasikan waktu reaksi (6; 12; 18; 24; 30) jam, suhu reaksi (30; 35; 45; 50; 55)ºC, dan perbandingan rasio mol gliserol dengan asam palmitat (1:1;2:1;4:1;6:1;8:1) mol. Asam palmitat yang tidak bereaksi dititrasi dengan larutan NaOH untuk memperoleh nilai konversi esterifikasi (%). Produk diidentifikasi dengan menggunakan spektrofotometer FTIR dan dikarakterisasi berdasarkan nilai HLB (Hydrophilic Lipophilic Balance) menggunakan metode bilangan air. Hasil penelitian menunjukkan waktu reaksi optimum selama 18 jam, suhu reaksi esterifikasi optimum 50⁰C, dan perbandingan rasio mol gliserol dengan asam palmitat 1:1 mol dengan nilai konversi esterifikasi 15,30%. Hasil identifikasi menggunakan spektrofotometer FTIR menunjukkan adanya pita serapan pada bilangan gelombang 3446 cm- 1 (O-H), 1701 cm-1 (C=O) ester dan 1296 cm-1 (C-O) ester. Hasil uji nilai HLB pada palmitoil gliserol adalah 5,83 yang menyatakan bahwa palmitoil gliserol dapat digunakan sebagai emulsifier pada sistem air dalam minyak (W/O).

English Abstract

Glyceride esters of glycerol and palmitic acid can be made by the enzymatic esterification reaction. This glyceride ester function as an emulsifier. The purpose of this study was to obtain the optimum conditions on reaction time, reaction temperature, and mole ratio factors that affect the esterification process between glycerol and palmitic acid using the immobilized Candida rugose lipase as a catalyst. The esterification reaction used n-buthanol as solvent and 0.1 g immobilized lipase with various reaction time of (6; 12; 18; 24; 30) hours, various reaction temperature of (30; 35; 45 ; 50; 55)ºC, and various mole ratio between glycerol with palmitic acid of (1:1; 2:1; 4:1; 6:1; 8:1) mole. Unreacted palmitic acid was titrated with NaOH solution to obtain the conversion value of esterification (%). The product was identified using the FTIR spectrophotometer and characterized based on HLB value (Hydrophilic Lipophilic Balance) using water number method. The results showed that the optimal condition of esterification was achieved at reaction time of 18 hours, the optimal reaction temperature of 50⁰C, and the optimal mole ratio between glycerol and palmitic acid of 1:1 mole with resulting in 15.30% of conversion value. The identification using a FTIR spectrophotometer showed that there was an absorption band at wavenumber 3446 cm-1 (O-H), 1701 cm-1 (C=O) ester and 1296 cm-1 (C-O) ester. The results of the HLB test on palmitoyl glycerol was 5.83 that palmitoyl glycerol could be used as an emulsifier in a water-in-oil system (W/O).
