Indonesian Abstract

Ester stearoil gliserol merupakan hasil esterifikasi gliserol dengan asam stearat secara enzimatis menggunakan katalis enzim lipase amobil yang diamobilkan dengan matriks kitosan dengan metode penjebakan. Penelitian ini bertujuan untuk menentukan kondisi optimum esterifikasi gliserol dengan asam stearat berdasarkan tiga parameter. Reaksi esterifikasi dilakukan dengan variasi waktu reaksi (6, 12, 18, 24, 30) jam, suhu reaksi (30, 35, 45, 50, 55) oC, dan rasio asam stearat : gliserol (1:1, 1:2, 1:4, 1:6, 1:8) mmol hingga didapatkan kondisi optimum berdasarkan persen konversi. Produk ester diidentifikasi dengan spektrofotometer FTIR dan dikarakterisasi melalui nilai Hidrophilic-Lipophilic Balance (HLB). Hasil penelitian didapatkan pada kondisi optimum yaitu waktu reaksi 24 jam, suhu reaksi 45oC dan rasio (1:2) mmol dengan persen konversi sebesar 9,77% dan nilai HLB sebesar 5,01 yang termasuk dalam emulsifier jenis w/o emulsifier. Selain itu, spektra FTIR yang didapatkan menunjukkan adanya serapan yang kuat pada bilangan gelombang 1703,03 cm-1 (C=O), 1043,02 cm-1 (C-O), dan 3402,20 cm-1 (O-H) yang merupakan serapan yang khas dari ester stearoil gliserol yang terbentuk.

English Abstract

Stearoyl glycerol ester is the result of the esterification of glycerol with stearic acid enzymatically using immobilized lipase enzyme catalyst that immobilized with chitosan matrix with entrapment method. This study aims were to determine the optimum condition of esterification of glycerol with stearic acid based on three parameters. The esterification reaction was done by varying reaction time (6, 12, 18, 24, 30) hours, reaction temperature (30, 35, 45, 50, 55)oC, and ratio of stearic acid : glycerol (1: 1, 1: 2, 1: 4, 1: 6, 1: 8) mmol until the optimum conditions are obtained based on conversion percentage. The produced ester were identified by FTIR spectrophotometer and characterized by the value of Hydrophilic- Lipophilic Balance (HLB). The results were obtained at optimum conditions on reaction time 24 hours, reaction temperature 45oC and ratio of stearic acid : glycerol (1:2) mmol with conversion percentage of 9.77% and HLB values of 5.01 that was included in the w/o emulsifier type. In addition, the FTIR spectra obtained showed a strong absorption at wave numbers 1703.03 cm-1 (C=O), 1043.02 cm- 1 (C-O), and 3402.20 cm-1 (O-H) thar showed the characteristic absorption of stearoyl glycerol ester.
