Indonesian Abstract

/Nipah merupakan tanaman multifungsi yang banyak terdapat di daerah pesisir Pulau Bawean, Kabupaten Gresik, Provinsi Jawa Timur. Luas areal yang mencapai 280 Ha memiliki potensi ketersediaan nira dan buah yang cukup untuk dimanfaatkan sebagai produk pangan /. Permasalahan yang ditemukan adalah seberapa besar nilai tambah yang dihasilkan dari p engolahan nira dan buah nipah menjadi produk pangan /sehingga layak untuk didirikan unit agroindustri. Tujuan dari penelitian ini adalah untuk mengetahui nilai tambah masing-masing produk olahan nipah dan juga untuk mengetahui nilai tambah produk olahan nipah secara terpadu. /Proyeksi ketersediaan nira dan buah nipah di P.Bawean cukup melimpah dan layak diusahakan untuk agroindustri dengan kapasitas 1.000 kg per hari. Ketersediaan nira per tahun sebesar 17,64 juta liter dan daging buah nipah sebesar 6.216 ton per tahun. A /nalisis nilai tambah pada produk olahan nipah dihasilkan nilai tambah koktail sebesar Rp. 2.358,23 per kg /, selai sebesar Rp 2.813,31 per kg, gula sirup sebesar Rp. 705,26 per liter, gula semut sebesar Rp. 203,27 per liter /dan gula cetak sebesar Rp. 292,36 per liter bahan baku /. Sedangkan pengolahan secara terpadu menghasilkan nilai tambah sebesar Rp. /1 .3 /09 ,2 /6 per kg /, selai sebesar Rp 2.798,12 per kg, gula sirup sebesar Rp. 1.201,40 per liter, gula semut sebesar Rp. 509,01 per liter /dan gula cetak sebesar Rp. 494,07 per liter bahan baku / dan rerata nilai tambah produk olahan nipah secara terpadu sebesar Rp. 1.262,37 per kg bahan baku dengan distribusi untuk imbalan tenaga kerja sebesar 5,65 %, sumbangan input lain sebesar 61,01% dan keuntungan pemilik faktor produksi sebesar 33,34%.

English Abstract

Nypa was a multifunctional plant that was widely available in the coastal areas of Bawean Island , Gresik Regency , East Java Province. The area that reached 280 ha had the potential availability of fruit juice and enough to be utilized as a food product . The problem found was how much the value- added resulting from the processing of sap and nypa flesh into food products so that it was feasible to set up an agroindustrial unit . The purpose of this study were to find out the value- added of each nypa- processed product and the integrated value -added of nypa-processed product. The availability of sap and nypa flesh in Bawean Island was projected relatively abundant and was stated feasible to set up an agroindustrial unit with capacity of 1000 kg per day . The availability of sap per year was 17,64 million liters and the flesh was 6.216 tons per year . Value-added analysis of nypa-processed products resulted the value-added for coctail, jam, syrup sugar, granular sugar, and nypa sugar were Rp. 2,358.23 per kg, Rp. 2,813.32 per kg, Rp. 705 .26 per liter, Rp. 203.27 per liter and Rp. 292.36 per liter respectively. Meanwhile the integrated value-added analysis of nypa-processed products for coctail, jam, syrup sugar, granular sugar, and nypa sugar were Rp. 1,309.26 per kg, Rp. 2,798.12 per kg, Rp. 1,201.40 per liter, Rp. 509.01 per liter and Rp. 494.07 per liter respectively; and integrated value-added average of nypa-processed products were Rp. 1,262.37 per kg of raw material to the distribution for labor salary by 5.65%, the contribution of other input by 61.01% and the owner of production factors gained 33.34%.
