Abstract
Kentang merupakan salah satu jenis sayuran yang mendapat prioritas dikembangkan di Indonesia.kentang memiliki potensi dan prospek yang baik untuk mendukung program diversifikasi pangan dalam rangka mewujudkan ketahanan pangan berkelanjutan. Sehingga kentang memiliki prospek yang cukup cerah untuk meningkatkan devisa negara melalui ekspor. Perkembangan bisnis olahan sayuran mendorong timbulnya persaingan antar perusahaan.Salah satu cara dalam meningkatkan daya saing perusahaan adalah menghasilkan produk yang berkualitas dan mampu memenuhi permintaan konsumen. Upaya yang dapat dilakukan dalam menghadapi persaingan tersebut yaitu menciptakan sistem yang saling terintegrasi dari anggota rantai pasok. Sehingga diperlukan manajemen rantai pasok dan evaluasi kinerja pemasok yang merupakan faktor terpenting dalam pemenuhan bahan baku serta menciptakan sistem rantai pasok yang optimal. Agroindustri keripik kentang CV. Cita Mandiri merupakan salah satu perusahaan yang bergerak dalam usaha pengolahan keripik kentang dan sebagai supplier buah serta sayuran di Kota Batu, Agroindustri keripik kentang di CV. Cita Mandiri ini merupakan salah satu agroindustri terbaik di kota Batu karena memiliki kualitas keripik kentang yang baik, cita rasa yang enak dan berbahan kentang asli tanpa campuran bahan baku lainnya sehingga diperlukan adanya manajemen rantai pasok untuk kontinuitas produksi keripik kentang. Tujuan penelitian ini adalah (1) mengidentifikasi rantai pasok pada agroindustri keripik kentang. (2) menganalisis kinerja manajemen rantai pasok pada agroindustri keripik kentang. (3) menganalisis kinerja pemasok bahan baku pada agroindustri keripik kentang. Metode dalam penelitian ini menggunakan metode deskriptif dan metode kuantitatif. Metode deskriptif digunakan untuk menggambarkan manajemen rantai pasok dengan pendekatan SCOR (Supply Chain Operations References) 5 proses inti yaitu plan, source, make, deliver, return. Metode kuantitatif digunakan untuk mengetahui prioritas kinerja pemasok terbaik dengan metode analisis AHP (Analytical Hierarchy Proces) dengan hasil pembobotan menggunakan software Expert Choice 11. Hasil penelitian menunjukkan bahwa rantai pasok pada agroindustri keripik kentang dimulai dari supplier (pemasok) manufacture (perusahaan), retailer (outlet) consumer (konsumen) yang terdiri dari 3 aliran yaitu aliran barang, aliran informasi maupun aliran finansial yang bergerak dari hulu ke hilir maupun sebaliknya. Kinerja manajemen rantai pasok pada agroindustri keripik kentang CV. Cita Mandiri berdasarkan model SCOR (plan, source, make, deliver, return) sudah berjalan dengan baik, hal tersebut dapat dilihat bahwa semua i kegiatan produksi sudah berjalan sesuai dengan jadwal yang ditentukan oleh perusahaan, akan tetapi terdapat beberapa kali kegiatan produksi tidak sesuai dengan jadwal yang sudah ditetapkan karena disebabkan oleh permintaan pemesanan mendadak dari konsumen. Hasil analisis kinerja pemasok bahan baku dengan menggunakan metode AHP diperoleh urutan prioritas kriteria evaluasi kinerja yaitu kriteria harga (0,406), kualitas (0,335), pengiriman (0,130) dan pelayanan (0,070). Dan urutan prioritas kinerja pemasok terbaik adalah pemasok A (0,429), pemasok C (0,316), pemasok D (0,129), pemasok B (0,125). Sehingga perusahaan dapat menentukan prioritas kepada pemasok tersebut dalam memenuhi pengadaan bahan baku keripik kentang.
English Abstract
Potato is one of vegetables which gets priority development in Indonesia.Potato has potential and good prospects to suppor tthe food diversification programin order to achieve sustainable food security. Therefore, potatohas a good prospect to increase state foreign exchange through exports. Business development in vegetables field encourage the competition among companies. One way to improve the competetiveness among companies is to producea quality productand capable to fulfill the consumer’s demand. An effort which can be doneto encounter the competitionis creatingan integrated system from supply chain members. Therefore, the supply chain management and supplier performance evaluationare needed because it is an important factor infulfilling raw materialas well ascreatingan optimal supply chain system. Potato chips agroindustry of CV. Cita Mandiri is one of the company which is budging in the process of potato chips field and as supplier of fruit and vegetablesin Batu city, potato chips agroindustry in the CV. Cita Mandiri is one of the best agroindustry in Batu because it has good quality of potato chips, good taste and made from original potato without other raw materials, so it needs supply chain management for potato chips product continuity. The objectives of the study were;(1) to identify agroindustry supply chain of potato chips,(2) to analyze the performance of supply chain management in the potato chips agroindustry,and (3) to analyze the performance of raw materials suppliers to potato chips agroindustry. The methods in this researchuse descriptive method and quantitative methods. Descriptive method is used to describe the supply chain management approach to SCOR(Supply Chain Operations References) with 5core process, such as plan, source, make, deliver and return. Quantitative method is used to determine the priority of the best supplier performance by using AHP analysis method (Analytical Hierarchy Process) the heavy results of using Expert Choice 11 software. The result showed that the supply chain on potato chips agroindustry started by supplier manufacture retailer consumer consisted of three flows, such as commodity flows, information flows and financial flows from up to down flows, and vice versa. The performance of supply chain management in the potato chips agroindustry CV. Cita Mandiri based on the SCOR models (plan, source, make, deliver, return) has been running well, it can be seen that all production activities had been done in accordance with the schedule set by the company, whereas sometimes there are some production activities which are not agree with defined schedule because of a sudden booking requests from consumers. iii The analysis results of the raw materialssuppliers performancewhich used AHP method obtained the order of criteria priority for performance evaluation they are price (0.406), quality (0.335), delivery (0.130) and services (0.070). While the priority order of priority of the best supplier was supplier A (0.429), supplier C (0,316), supplier D (0.129) and supplier B (0.125). Thus, the company can determine the priority to those suppliers in fulfilling raw material provision of potato chips.
