Indonesian Abstract

Tanaman pisang (Musaceaea sp.) merupakan tanaman penghasil buah yang banyak terdapat di Indonesia. Buah pisang banyak dimanfaatkan untuk produk industri pangan, salah satunya adalah produk Kripik Pisang Raja yang diproduksi oleh UKM Fronizka Indomedia Sukses yang terdapat di Kabupaten Malang. Produksi kripik pisang Raja menghasilkan limbah kulit pisang yang berlimpah. Dalam penelitian ini kulit pisang dimanfaatkan sebagai substrat bahan baku produksi asam sitrat dengan metode fermentasi padat oleh Aspergillus niger. Produksi asam sitrat dengan metode fermentasi padat memiliki keunggulan teknik yang sederhana dan biaya lebih rendah. Dilaporkan bahwa kandungan seng (Zn) dapat meningkatkan produksi asam sitrat karena Zn berperan menstimulus fisiologis Aspergillus niger dan diperlukan untuk perkembangbiakan sel. Tujuan penelitian ini untuk mengetahui konsentrasi larutan garam mineral ZnSO4 yang optimal dalam proses produksi asam sitrat. Penelitian disusun menggunakan Rancangan Acak Lengkap (RAK) non faktorial. Faktor perlakuannya yaitu konsentrasi ZnSO4 2 ppm, 4 ppm, 6 ppm, 8 ppm, dan 10 ppm. Parameter Uji yang dilakukan meliputi pH, Total Gula Reduksi (TGR), kadar asam sitrat, dan analisa spektroskopi inframerah (FTIR). Hasil penelitian menunjukkan pemberian ZnSO4pada setiap level perlakuan memberikan hasil yang tidak berbeda pada pH hasil fermentasi. Level perlakuan ZnSO4 memberikan hasil TGR yang fluktuatif pada setiap level perlakuan. Hasil analisa kadar asam sitrat menunjukkan peningkatan kadar asam sitrat yang signifikan pada setiap level konsentrasi ZnSO4. Perlakuan terbaik diperoleh dari konsentrasi ZnSO4 10 ppm. Kadar asam sitrat yang dihasilkan 26,62%, total gula reduksi yang terkandung sebesar 164,10 mg/g, dan nilai pH 3,22. Hasil analisa spektroskopi inframerah (FTIR) pada sampel perlakuan terbaik teridentifikasi terdapat kandungan asam sitrat. Dibuktikan dengan adanya tiga gugus karbonil (C=O), didukung dengan adanya gugus O-H, dan terdapat gugus C-O.

English Abstract

The banana plant (Musaceaea sp.) is a fruit-producing plant widely found in Indonesia. Bananas used for food industry products, one of them is Raja Banana chips, produced by UKM Fronizka Indomedia Sukses, which is located in Malang. Production of Raja banana chips produces a lot of banana peels waste. In this study, banana peels is used as a substrate of citric acid production by solid state fermentation by Aspergillus niger. The production of citric acid by solid state fermentation method has the advantages of simple technique and lower cost. Zn can increase citric acid accumulation because Zn plays a role in determining the physiological state of Aspergillus niger and is necessary for cell proliferation.The purpose of this study was to determine the optimal concentration of ZnSO4 mineral salt solution in citric acid production process. The research is used Non Factorial Completely Randomized Design. The treatment factor was ZnSO4 concentration of 2 ppm; 4 ppm; 6 ppm; 8 ppm and 10 ppm. The tests include pH, Total Sugar Reduction, citric acid content, and infrared spectroscopy analysis (FTIR). The results showed that ZnSO4 addition at each treatment level gave no different result on pH. The ZnSO4 treatment level gives a fluctuating total sugar reduction result at each treatment level. The result of citric acid content analysis showed a significant increase of citric acid level at each level of ZnSO4 concentration. The best treatment was obtained from ZnSO4 concentration of 10 ppm. The citric acid content was 26.62%, the total reducing sugar contained was 164,10 mg/g, and the pH value was 3.22. The results of infrared spectroscopy analysis (FTIR) in the best treatment sample identified the content of citric acid. It is proved by the presence of three carbonyl groups (C = O), supported by the presence of O-H, and there is a C-O group.
